Time to share another one of our Quick & Easy Breakfast ideas. How about a DIY Chocolate Chip Granola Bars Recipe? Granola Bars seem to be one of the few healthy items that my kiddos will consume, ha ha! So, I am always more than willing to purchase boxes at the store when I have a sale and a coupon. Unfortunately, we do not find awesome sales often enough. I have decided that when the kiddos are begging for Granola Bars I will just whip them up a quick batch of DIY Chocolate Chip Granola Bars. We find our version to be much healthier and more yummy!

DIY Granola Bars Recipe
I will admit mom and dad love snagging a few of these and dipping them in our morning (or afternoon and evening) coffee. I place each bar in a snack sized ziplok bag and place in our breakfast/snack bin. If your kiddos love treats like mine do for breakfast be sure to also see my DIY Fruity Pebbles Cereal Bars post here if you have yet to check it.

Ingredients
1- 1/2 Softened Sticks of Butter
3/4 Cup of Honey (I always add a bit extra honey)
1/3 Cup of Brown Sugar (Packed)
1 Teaspoon Baking Soda
1 Cup Flour
1 Teaspoon Vanilla Extract
4 1/2 Cups Quick Oats
1 Cup Semi-Sweet Chocolate Chips

Preheat your oven to 325 Degrees
Cream butter, brown sugar, vanilla extract and honey together. You will need a Stand or hand mixer to really get these mixed well.
Stir in your Flour, Baking Soda and oats. You will want the consistency to be quite crumbly looking
Then stir in your Chocolate chips (or other tasty extra if desired)
Press firmly into a 9X13 pan that has been sprayed generously with cooking spray
Bake for about 20 minutes
Allow to cool and then cut into bars
