Making homemade bread is as satisfying as it is tasty. There are plenty of recipes on the internet for delicious bread made from scratch using all sorts of great shortcuts and tricks. Recently, we got around to making another homemade loaf that we think you folks are going to love. Give this Carrot Bread with Cinnamon Cream Cheese Frosting a try!

This homemade bread is sort of like a Carrot Cake Bread. It’s got a sweet flavor, thanks to the sugar and sweetness from the carrots, but it still chews and feels like bread. To spice things up a little bit, we added in some classic baking spices- cinnamon and nutmeg- and topped the whole Carrot Loaf off with some frosting. This Cinnamon Cream Cheese Frosting is great enough on its own but, paired with this wonderful Carrot Spice Bread, it’s perfect!

You can serve up this Carrot Cake Loaf as an Easter dessert or maybe even as a sweet breakfast. Any leftovers you have should keep real well too, which means you’ll be able to enjoy your Homemade Carrot Bread for a good while! Carrot Bread Ingredients

For our Carrot Bread recipe, we’re going to mix the dry and wet ingredients separately before mixing them together. For the dry ingredients, you’ll need:
  • Flour
  • Granulated Sugar
  • Baking Soda
  • Spices – We used cinnamon and nutmeg for this recipe, but I imagine something like our Homemade Pumpkin Pie Spice might work too!
Next, for the wet ingredients, you’re going to use:
  • Carrots
  • Eggs
  • Oil – Something neutral like vegetable or canola. We used vegetable oil.
  • Milk
  • Vanilla Extract
We’re also topping our loaf with some cinnamon cream cheese frosting, which is going to need:
  • Cream Cheese – Softened.
  • Butter – Also softened.
  • Confectioner’s Sugar
  • Vanilla Extract
  • Cinnamon

How to make Carrot Bread

We’ve kept this recipe for Carrot Bread very simple so it’s easy to make. To make some yourself, here’s all you have to do:
  1. Mix the dry and wet ingredients separately before combining into a batter. Transfer to a lined loaf pan.
  2. Bake at 350 degrees for about 60 minutes. Bread is done when a toothpick pulls clean. Allow to cool.
  3. Cream together cream cheese and butter. Beat in sugar, vanilla, and cinnamon to make frosting. Frost cooled carrot loaf with frosting. Slice and serve.

In one bowl, whisk together the flour, granulated sugar, baking soda, and spices- those are our dry ingredients. Peel your carrots and grate them on one of the finer sides of a grater. Add them to a seperate bowl with the eggs, oil, milk, and vanilla extract.

Thoroughly mix those wet ingredients together before you start gradually adding in the dry ingredients. Add the dry stuff in a hefty dash at a time and make sure there’s no big clumps. Avoid overmixing.

Eventually, your wet and dry ingredients will come together into a sort of batter. Take that batter and transfer it to a parchment-lined loaf pan. Pop the pan into an awaiting 350 degree oven and let it bake for about an hour. To check if your carrot loaf is done, poke a toothpick into it. If the toothpick pulls clean with no wet batter on it, the loaf is done.

How to make cream cheese frosting

While our Carrot Bread cools off, we’re going to make a cinnamon cream cheese frosting to top it off with. For that, start by creaming together the softened cream cheese and butter.

Once those are beaten together thoroughly, we’ll add in some vanilla extract and cinnamon. Start adding in the confectioner’s sugar as well: add it until the frosting gets to the consistency you like.

By this point, your carrot loaf has probably cooled off. Use the parchment to easily remove it from the loaf pan.

You can pipe the frosting on or simply just spread it on and even it out with a butter knife.

Once you’ve frosted the Carrot Bread to your liking, cut into slices. Serve it up and enjoy!

How long is Carrot Bread good for?

Kept in an air-tight container or ziploc bag, expect your Carrot Bread to last about a week at room temperature. In the fridge, it’ll probably last a bit longer- up to 2 weeks. You can also freeze this carrot loaf for a month or two before the texture starts to degrade. Allow to thaw and defrost for a day in the fridge before serving if frozen.

Ingredients 

Bread

  • 2 cup Flour
  • 1 cup Sugar
  • 1 1/2 tsp Baking Soda
  • 1 1/2 tsp Cinnamon
  • 1 tsp Salt
  • 1/2 tsp Nutmeg
  • 2 1/2 cup Carrots, grated
  • 3 eggs
  • 3/4 cup Vegetable Oil
  • 1/4 cup Milk
  • 1 tsp Vanilla

Frosting

  • 4 oz Cream Cheese, softened
  • 2 tbsp Butter, softened
  • 1 cup Powdered Sugar
  • 1/2 tsp Vanilla
  • 1/4 tsp Cinnamon

Instructions 

Bread

  • Preheat oven to 350.
  • Line a 9x5" loaf pan with a piece of parchment paper.
  • In one bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon and nutmeg. Set aside.
  • Thoroughly mix carrots, eggs, oil milk, and vanilla in a large bowl.
  • Add the dry ingredients to the wet mixture and mix until just combined.
  • Pour batter into the prepared pan and bake for about an hour, until a toothpick inserted in center comes out clean.
  • Cool bread completely in the pan.

Frosting

  • Cream together the cream cheese and butter in a medium bowl. Add in the vanilla and cinnamon.
  • Add the powdered sugar and beat on low until blended and creamy.
  • Remove cooled bread from pan and frost.

    1. Hi Barb! I have not tried making this Carrot bread in a bundt pan. If you try it, be sure to let us know.

    1. I just made the recipe in a Bundt pan and turned out well. Just put a thermometer halfway into bread around the 40 min mark and cook until 205 degrees.
      I used a normal sized pan and it filled the pan to about 3/4th the pan once done. Next time I’ll use my smaller 5 cup pan or decorative Bundt loaf pan. All the decorative grooves in my pan filled perfectly, something I wasn’t confident in because of the grated carrots.
      I haven’t tried it yet, but Jen’s recipes have never disappointed me.
