These Honey Garlic Roasted Carrots will make for a great side dish for just about any meal. We roast our carrots in the oven with honey, garlic, melted butter, and herbs. They are so easy and simply delicious.

Honey Garlic Roasted Carrots

Since Easter is just around the corner, I wanted to add a few vegetable side dishes for you to consider serving for the holiday. These roasted carrots are a perfect side dish for every day meals and also great for all of your holiday dinners. The honey, garlic, butter, and herbs create a slightly sweet and savory flavor that pairs so well with many dishes. When we roast carrots in the oven, it really brings out some of the sweet flavors that are naturally found in fresh carrots.

Roasting carrots in the oven is so super easy. You will simply prepare your carrots, the easy honey garlic butter sauce, and then toss in the oven on a sheet pan. It really can not be much easier. The results are deliciously caramelized and browned buttered veggies that the entire family will love.

How to Roast Carrots In the Oven

First off, you will want to give your carrots a good scrubbing. Be sure to remove any dirt. Rinse real well with some cold water. I would not suggest using the pre-washed/bagged baby carrots because they just do not have the flavor you find in fresh carrots.

Then go ahead and trim your ends from your carrots. You can either peel the skins or leave them on, it is up to you. I usually peel our carrots because I need to keep them kid friendly.

I find it best to cut my larger carrots into thirds. You can leave them whole, half them, or cut them even smaller. The smaller your carrots, the quicker they will roast.

Next, you will want to make your honey garlic butter sauce. This process is so simple. Just toss all the ingredients into a bowl and whisk. You can omit the parsley and thyme if you do not have it available.  The fresh herbs are not needed but add a bit of additional flavor.

Finally, you will toss your prepared carrots in the honey garlic butter sauce. Then spread them on a baking sheet and toss in the oven to roast.

I do turn my roasted carrots half way through the baking process. This allows the carrots to have the unappealing but tasty brown to all sides of the carrot. I have to admit it does make the carrots look a bit less orange and maybe unappealing to some, but I think it allows the carrots to cook and taste even.

How long does it take to roast carrots in the oven?

Typically when we cut our larger carrots into thirds, about 2-3 inches each in size, the carrots will take about 30-35 minutes to roast at 450 degrees. This cook time results in a very tender roasted carrot. As I mentioned above, the carrots will roast much quicker if they are cut smaller. If you leave them whole, they will take a bit longer. All ovens can be different so the time can vary. The longer you cook, the more tender the carrots will be. Just be careful to not allow them to cook so long that they become mushy.

Can I make Roasted Carrots ahead of time?

Sure you can! Go ahead and make your carrots per the instructions. Then allow them to cool completely. Place them in the refrigerator in a cover dish for up to 24 hours. Then toss them in a baking dish with a lid. Then allow the carrots to bake for about 20 minutes. You may want to brush on a bit of melted butter so they do not dry too much.

2 lb Carrots
3 tbsp Honey
3 tbsp Butter
1 tsp Minced Garlic
1/4 tsp Salt
1/8 tsp Pepper
1/8 tsp Thyme
1 tsp fresh Parsley, chopped (optional)

How to make Honey Garlic Roasted Carrots

Preheat oven to 425.
Wash, peel and chop carrots into 2″ pieces.
In a medium bowl, add butter and microwave for 60 seconds.
Add honey, garlic, salt, pepper and thyme.
Whisk to combine.
Add carrots to bwl and toss to coat.
Place carrots on baking sheet.
Bake for 15 minutes.
Turn carrots on other side.
Bake for 15-20 minutes, until carrots are tender.
Garnish with parsley, if desired.

    Have to say, carrots are the most neglected veggie in my fridge, etc. I have noticed they can also taste a bit off if too old. With your 2 easy carrot recipes, we will be eating more of them and not just boiled in a pot. Thank you, Jen!
