Cranberry & White Chocolate Blondies

If you are looking for some yummy treats to get yourself ready for the holiday, consider throwing together these Cranberry & White Chocolate Blondies. This morning I was ready to bake and bake some more, ha ha. I have never tried to make a blondie bar. Have you? If not, now is the time to give them a try. I am adoring this new recipe for sure!
Cranberry & White Chocolate Blondies
I love cranberries in many different recipes throughout the holiday season,. I am just not real fond of cranberry sauce (unless it is homemade of course). The hubby loves his canned cranberry sauce all season long (not just on Thanksgiving and Christmas). I personally love Cranberries and I love white chocolate. I am most excited to have the kiddos try these yummy Cranberry & white Chocolate Blondies when they arrive home from school today (in just a few short minutes). My daughter loves cranberries and I am sure going to ask why I did not add nuts just like dad did, ha ha. The nuts would have been a nice addition and not sure why I did not think to add them. Ok, maybe next time since this recipe is for sure being made again over the holidays. Have I mentioned that there are just a half pan left for the kiddos when they arrive?
INGREDIENTS
3/4 cup softened Butter
1 1/2 cup Brown Sugar
3 tsp Vanilla
1 Egg
1 1/2 cup Flour
1 tsp Baking Powder
1/2 tsp Salt
1 cup Dried Cranberries
1 cup White Chocolate Morsels
DIRECTIONS
Preheat oven to 350.
Line a medium pan with parchment paper.
Soak cranberries in bowl with hot water for 3 minutes.
Drain water from cranberries.
Cream butter and brown sugar.
Add vanilla and eggs.
Mix flour, baking powder and salt.
Combine dry ingredient mixture into wet ingredient mixture.
Add cranberries and white chocolate morsels.
Turn out mixture into the pan and press evenly.
Bake 20 minutes until the top is a lightly browned.
Cool for 30 minutes and cut into squares.
I am thinking these would make a nice little treat for the bus drivers this fall. I love tossing little treats at them to enjoy on the morning journey. If you should decide to whip up a batch of these yummy blondie bars and add the nuts, be sure to let me know how they taste.

And should it be 1 egg or 2? Ingredients says 1, but there are 2 in the photo & directions say eggs…
What size is a “medium” pan?
The Buns in My Oven blog suggested/linked to this recipe. I made these on a whim last night and they are SO GOOD! I’d say 1/4 of the pan is already gone between my boyfriend & me! They will definitely be in my Christmas cookie tins this year :) They are really rich and buttery and the tartness of the cranberries really make them pop. I didn’t soak the cranberries since they were already plump/sticky but have used this trick with raisins when they get a little dry.

I am guessing you did not use the Craisins as pictured in the ingredients photo? Cannot wait to taste these :)
Yup, I used Crasins Cathy. I just rinsed them with cold water to display in the photo so the color popped on those.
