Warm weather is just around the corner and these Watermelon Cupcakes are full of fun colors that are sure to be a hit at your summer bbqs. They are a quick, easy and fun summer dessert.

We are quite fond of watermelon around here, if you have yet to notice, ha ha! Our Watermelon Key Lime Slushies that I shared with you yesterday were a hit with the kiddos. The colors from watermelon are so bright and cheery. I knew rain was on it’s way this week and wanted to have some desserts for lunches that would brighten our days. These Watermelon cupcakes with chocolate chips and homemade buttercream icing were perfect for lunchboxes this morning.

While shopping at Target last week, I noticed that Betty Crocker has made their watermelon cake and icing available again this summer. I guess everyone is really enjoying the bright colors of watermelon inspired desserts.  I have plenty of regular white cake mixes on hand in my pantry and we prefer our own buttercream frosting on our cake desserts. So I decided to make our own watermelon cupcakes. These do not have watermelon flavors in them, they just resemble watermelon with the addition of mini chocolate chips for seeds and red and green food coloring to make them colorful.

All that is needed for these simple and colorful cakes is a cake mix, mini chocolate chips, food coloring, butter and a few other ingredients you will most likely already have on hand.

INGREDIENTS
Cake:
1 box White Cake Mix + box ingredients
3/4 cup Mini Chocolate Chips
Red and Yellow Food Coloring
Frosting:
1 cup softened Butter
3 cup Powdered Sugar
3 tbsp Milk
1 tsp Vanilla
Green Food Coloring

Watermelon Cupcakes- a quick, easy and fun summer dessert for your summer bbq's.

DIRECTIONS
Preheat oven and line muffin tins with paper liners.
Prepare batter according to box directions.
Add just a touch of yellow color and enough red to achieve watermelon pinkish color.
Fold in chocolate chips until distributed.
Fill liners 2/3 full and bake according to box directions for cupcakes.
Allow to cool completely.
Whip butter and vanilla for until fluffy.
Gradually add powdered sugar.
Add milk until you reach desired consistency.
Transfer to piping bag with round tip and frost each cupcake.

We have friends and family over for bbqs quite often during the summer. Sometimes we decide to get together with very little notice. Having a quick and easy summer themed dessert is perfect for those times we are rushed.

Ingredients 

Cake

    Instead of buying the cake mix i just used a vanilla cupcake recipe and added food coloring and choc chips👍👍

    These cupcakes look amazing I can’t wait to try them. Thank You for your recipes and you look way to young to have 5 kids , and still find time to bake wow amazing good job.

  3. I like the idea of using mini chocolate chips in the batter for the seeds.. I will use a green liner to resemble the rind & watermelon Koolaid powder to flavor the batter & icing ;-)

  4. HEy why does your watermelon cupcake have no watermelon flavoring? IT confuses me. I am not trying to be rude but honestly anyone can could create that recipe.
