    St Patrick’s Day Lucky Charms Cupcakes

    Now that we have Valentine’s Day behind us, I decided to make the kids these St Patrick’s Day Lucky Charms Cupcakes with marshmallow icing in the middle. They were so yummy! Filled with lots of sugar and topped with one of their favorite cereals. I enjoyed a bowl of Lucky Charms for a late evening snack the other evening and had thought about how cute these little cupcakes would be for St Patrick’s Day.

    St Patrick’s Day Lucky Charms Cupcakes

    I have been scoring the hot Betty Crocker Cake Mix deal at Target (scored another 10 today, ha ha) and have been using these cake mixes for yummy treats for the kiddos 9or should I say more so for myself, ha ha). We always have Lucky Charms in the panty so, these St Patrick’s Day Lucky Charms cupcakes were a must make. The addition of the Green Marshmallow Icing in the middle really set these cupcakes to another level of yumminess.

    Lucky-Charms-Cupcakes-In

    INGREDIENTS
    1 box White Cake Mix
    3 Eggs
    1/3 cup Vegetable Oil
    1 cup Water
    1/4 cup softened Butter
    7 oz Marshmallow Cream
    2 1/2 cup Powdered Sugar
    1 to 2 tbsp  Milk
    1-2 cups Lucky Charms cereal
    Green Decorating Sugar

    DIRECTIONS
    Follow directions on box for cupcakes.
    After baking move to cooling rack.
    Combine butter and marshmallow cream in medium bowl on medium speed until blended.
    Slowly add sugar beating until well blended.
    Gradually add milk until desired consistency is reached.
    Transfer half of icing to another bowl and add green food coloring and mix well to blend color.
    Transfer green icing to zippered bag and clip corner to pipe.
    Cut a small square in the center of each cupcake.
    Fill hole with green icing.
    Cut off inner part of removed “plug” and replace in cupcake.
    Ice top of cupcake with white icing.
    Place Lucky Charms pieces on top and sprinkle with green decoration sugar.

    If you are needing a quick throw together cupcake, these will work out great. Great for a St. Patrick’s Day party or get together. Yes, even adults love Lucky Charms Cereal ha ha!
