Pancake Bacon Dippers

These Pancake Bacon Dippers would be a great idea for dinner this evening. Today is National Pancake Day and I am thinking it would be a great night to enjoy breakfast for dinner. The kiddos loved my French Toast Roll-Ups Recipe. Last week I made them these Pancake Bacon Dippers and they enjoyed them so much. I promised them I would make them again soon. Tonight will be the night, ha ha.  We MUST celebrate National Pancake Day, lol.

Pancake Bacon Dippers
These Pancake Bacon dippers are so simple. I am planning to pick up some more pre-cooked bacon today so I can have a very simple dinner tonight. I will pair these little pancake strips up with some syrup and some fresh fruit and dinner will be easy, quick and minimal clean up.

Pancake Bacon Dippers In

INGREDIENTS
2 cup Bisquick
1 cup Milk
2 Eggs
12 oz Bacon

Bacon Pancake Dippers

DIRECTIONS
Cook bacon, drain, set aside.
Stir Bisquick, eggs and milk until blended.
Transfer to squirt bottle.
Heat greased griddle or skillet over medium heat.
Squirt outline of about the size of bacon on heated surface.
Fill in with batter.
Place bacon on poured batter.
Using squirt bottle, squirt batter on top of bacon.
Turn when edges start dry out.
Cook until golden.
Serve with syrup for dipping.

I normally purchase the kids the Eggo Microwave mini pancakes as they love that they can dip them. These Pancake Bacon Dippers are great as they are a dippable pancake filled with their favorite meat… Bacon. Oh and the hubby was really surprised to find his favorite inside too!  Making pancakes is so simple. Having a hot griddle or pan is key (but not too hot).
