Homemade Funfetti Cupcakes

Cupcakes are some of my favorite baked desserts to whip up for any sort of party. Batters are usually quick and easy to whip up, you can mix a frosting up without much difficulty, and cupcakes are always a crowd-pleaser. There’s plenty of flavors and directions you can take your cupcakes, but these Funfetti Cupcakes are a great go-to option!

Homemade Birthday cupcakes with sprinkles

These homemade cupcakes use an easy to make batter that’s flavored perfectly with vanilla and a touch of sour cream. That sour cream adds the slightest tang and keeps things real moist. Mix in some rainbow sprinkles for a little extra sugary crunch and you’ve got an excellent batter. Of course, we had to top these things with a delicious buttercream frosting as well. Don’t forget the sprinkles!

Homemade Cupcake Ingredients

  • White Sugar
  • Melted Butter
  • Egg
  • Sour Cream – Consider subbing in a plain or vanilla flavored yogurt here if you like.
  • Milk
  • Vanilla Extract
  • Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Rainbow Jimmies/Sprinkles
For the buttercream frosting, you’re going to need the following:
  • ButterIdeally, let it soften beforehand.
  • Powdered Sugar
  • Milk
  • Rainbow Sprinkles/Jimmies

How to make Funfetti Cupcakes

Making these delicious homemade cupcakes couldn’t be easier. Here’s all you’ll need to do…
  1. Prep your wet and dry ingredients seperately before gradually mixing into a batter.
  2. Transfer your prepared batter over to a lined cupcake pan and bake at 350 for about 20-25 minutes.
  3. Prepare a buttercream frosting and use it to top your cooled cupcakes.

Start things off by first prepping your wet ingredients. In a mixing bowl, beat together your butter, sugar, egg, sour cream, milk, and vanilla extract. Once those come together, add in your rainbow sprinkles and mix them in to the wet ingredients.

In a seperate bowl, whisk together your flour, baking powder, baking soda, and salt until thoroughly combined. After mixing the dry stuff together, you want to start gradually adding it to the wet ingredients. Add and mix the dry ingredients into the wet until no dry lumps remain.

Once that batter fully comes together, you can transfer it to a muffin or cupcake pan. Line the cups with some cupcake liners before pouring the batter evenly between each cup. Transfer the pan to an awaiting 350 degree oven and let it bake for about 20-25 minutes. After baking, let cool while you prep a buttercream frosting.

How to make buttercream frosting

First, start your buttercream frosting by whipping your butter to a fluffy consistency with a hand or stand mixer.

Once fluffy, start adding in your powdered sugar gradually until you reach your desired consistency. If you find your frosting has gotten too stiff, add a touch of milk to loosen it back up.

All that’s left is to transfer your finished frosting to a piping bag and to top your cupcakes. Give each cupcake a generous mound of frosting and top with a big pinch of rainbow sprinkles. Enjoy!

How long do cupcakes last?

Kept in an airtight container on the counter, these homemade cupcakes are best if enjoyed within 1-2 days. They’ll last longer kept in the fridge- about a week.

Homemade Funfetti Cupcakes

Ingredients 

Cupcakes:

  • 1 cup Sugar
  • 1/2 cup Butter, melted
  • 1 Egg
  • 1/4 cup Sour Cream
  • 3/4 cup Milk
  • 2 tsp Vanilla Extract
  • 1/2 cup Rainbow Sprinkles
  • 1 2/3 cups Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt

Buttercream Frosting:

  • 1 cup softened Butter
  • 4 cup Powdered Sugar
  • 1 tbsp Milk
  • 1/4 cup Rainbow Sprinkles

Instructions 

  • Preheat oven to 350.
  • Line muffin pan with cupcake liners. Set aside.
  • In a large bowl, beat together melted butter, sugar, egg, sour cream, milk, and vanilla until combined. Set aside
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Add sprinkles to wet ingredients.
  • Gradually stir dry ingredients into wet ingredients until lumps are gone.
  • Transfer batter into prepared cupcake liners.
  • Bake for up to 20-25 minutes or until a toothpick inserted in the middle comes out clean.
  • Allow cupcakes to cool.
  • In a medium bowl, whip butter until fluffy.
  • Gradually add powdered sugar until you reach desired consistency.
  • If the mixture is still stiff, gradually add milk.
  • Transfer frosting to a piping bag and frost cupcakes.
  • Sprinkle each with sprinkles.
