My family loves their pizza. Unfortunately the hubby is always cheap and only orders one topping (maybe two) when we order pizza from out. Yes, he is very cheap like that, ha ha. Last year, we bought ourselves one of those fancy and expensive counter-top pizza ovens. We loved it at first and used it quite frequently. Like most counter-top appliances, it found its way to the top shelf of the pantry, lol.

My favorite pizzas are loaded with lots of garlic and veggies. A Hawaiian pizza always gets my taste-buds going too! I really enjoyed making our own pizza at home. We could load up our favorite pizza toppings and everyone was happy. While on vacation, I finally decided to order a flatbread pizza. For some reason, I never care to eat pizza when there are always so many food options to choose from.

I decided to order a broccoli flatbread and it was out of this world amazing. It was really a very simple flatbread but I really enjoyed it. While shopping Kroger this weekend, I spotted some pre-packaged flatbread on the mark down rack. I couldn’t help but think of whipping up a tasty broccoli pizza with my bargain.

I really enjoyed the broccoli flatbread pizza that I had ordered on vacation but if I was going to make my own homemade flatbread pizza at home, I could not leave off onions. After enjoying my flatbread for lunch today, I realized they made this pizza over the top delish.

Since I used store bought flatbread, this broccoli pizza was ready in no time. I was impressed how tasty this simple recipe was. I am anxious to get my pizza oven out of my pantry and wipe the dust down so we can enjoy pizza at home again. But when we are short on time during the week, these quick and easy homemade flatbread pizzas will be perfect, each of the kiddos can choose their toppings and have them made quite quickly.

INGREDIENTS
2 Naan Flatbreads
2 tbsp Olive Oil
1 bunch Broccoli
1 Sweet Onion
1 1/4 cup shredded Mozzarella Cheese
2 tbsp grated Parmesan Cheese
1 tsp minced Garlic

Broccoli Flatbread Pizza -loaded with broccoli, onions, cheese and lots of garlic. A super easy and quick weeknight meal that is sure to please.

DIRECTIONS
Split bunch of broccoli down the middle and set aside.
Peel and slice onion into thick slices.
Heat 2 tablespoons of olive oil in a heavy skillet over medium heat.
Cook onions and broccoli in skillet for about 2 minutes per side until slightly softened and charred.
Remove from skillet and cut florets from stalk.
Preheat oven to 400.
Lightly grill each flatbread on each side and transfer to baking sheet.
Brush each piece of bread with remaining olive oil and sprinkle with minced garlic.
Cover each flatbread with 1/2 cup of mozzarella cheese and 1 tablespoon of Parmesan cheese.
Separate onion slices into rings and distribute over each flatbread.
Spread broccoli over each flatbread.
Bake for 10 minutes.
Sprinkle top of each flatbread with remaining mozzarella cheese and cook for another 3-4 minutes or until melted.
