Red Hot Cinnamon Cupcakes

I am in the Valentine’s Day type of mood and made these really yummy Red Hot Cinnamon Cupcakes for the kids after school treat. I know the kids are going to be coming through the door in a few hours. They are going to be all psyched up for another snow day tomorrow. Yup another storm on it’s way, yuck! All of my kids love Hot Tamales and Red Hot Candies so these Red Hot Cupcakes are going to be a nice surprise for them. Just a hint of cinnamon in the cupcakes and in the icing.
Red Hot Cinnamon Cupcakes
If you are needing to make some cupcakes up for Valentine’s Day check your pantry for a cake mix (I know I have loads of them on hand) and grab a box of Red Hots and whip up these tasty Valentine’s Day Cupcakes. Just add in some Valentine Sprinkles to really give them the Valentine’s Day look.
INGREDIENTS
1 box White Cake Mix
1 cup Water
1/3 cup Vegetable Oil
3 Eggs
9 oz Red Hots Candy
2 tbsp Milk
1 cup softened Butter
3 1/4 cup Powdered Sugar
Red Food Coloring (optional)- I did not use as the color pink was great for my icing achieved by Red Hots
Valentine Sprinkle Decorations
DIRECTIONS
Crush Red Hots in food processor until nearly powder
Make cupcakes according to box directions except add half of crushed Red Hots to batter.
After baking move to wire rack to cool completely.
In a large bowl, cream the butter.
Mix in the sugar and remaining crushed Red Hots.
If color is not pink enough for you, add several drops of red food coloring.
Beat in the milk mixing until fluffy.
Transfer icing to the corner of large size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe.
Ice the top of each cupcake.
You can top with Valentine sprinkles to add flair.
My kiddos really like cupcakes so much so that I end up having to make them more frequently than I would care to admit. Ha Ha! Plus I like to have cupcakes in the evening when the sugar cravings kick in.
I just decided to have one of these yummy cupcakes with my afternoon coffee. I would say the cinnamon flavor is subtle, not overwhelming. If you like a rally strong cinnamon flavoring you could add in a couple teaspoons of cinnamon extract.
As you can see the Red Hots really add a nice coloring to a basic cake mix. I really crushed the Red Hots well in the food processor and there were still just some extremely tiny pieces once in awhile. So yummy and sweet!
