One of my favorite dishes growing up happened to be scalloped potatoes with ham. My grandmother and mother would make them for a main dinner dish quite frequently. I knew after our holiday dinners were complete, the leftover ham would be tossed in a yummy potato casserole loaded with creamy goodness.

If there were leftovers from this casserole, we would eat them even a second time. Both my mother and my grandmother would make a huge portion with all that leftover ham. Perfect for feeding a large family like we had.

They were not one for adding cheese to their potato dishes. That may have been because we were on such a tight budget. I am a cheese lover, just ask anyone that knows me, lol. I load cheese into just about all the dishes I make.

So when I set out to make these Scalloped Potatoes and Ham, I knew I wanted lots of cheese involved. I love The Pioneer Woman. She has so many recipes that are perfect for feeding my family. I took a look at her Scalloped Potato Recipe and did a few modifications. This casserole turned out perfect. My entire family really liked them. I plan to make this recipe again after we have some leftover Easter Ham. But prepackaged ham worked great too. So super simple to make. Comfort food at it’s best!

Grab yourself some potatoes and a mandaline slicer if you have one. If not, you can slice your potatoes as thin as possible. Additionally you will need some diced ham, heavy cream, milk, flour, garlic, butter, onion, and of course the cheese.

INGREDIENTS
3 lb Russet Potatoes
2 tbsp Butter
1 Onion diced
1/4 tsp minced Garlic
16 oz diced Ham
2 cup Heavy Cream
1 cup Milk
1/4 cup Flour
8 oz shredded Cheddar Cheese
Pepper (to taste)

INSTRUCTIONS
Preheat oven to 350.
Thinly slice potatoes (I used mandoline slicer).
Butter a 9×11 baking dish.
In a large skillet, combine butter, onions, garlic and ham.
Cook over medium heat until onions are softened.
Remove from heat.
In a medium bowl (make sure it will fit in microwave), combine cream, milk and pepper an heat for 1 minute.
Add flour and whisk to combine.
Set aside.
Layer about 1/3 of the potato slices in the prepared dish.
Layer about 1/3 of the ham mixture on next.
Layer about 1/3 of the cheese.
Pour about 1/3 of the cream mixture on next.
Repeat this layering using one third of each ingredient.
Cover with foil and bake for 60 minutes.
Remove the foil and bake uncovered for another 20 minutes until lightly browned and cooked throughout.

Ingredients 

  • 3 lb Russet Potatoes
