Tuna Noodle Casserole
My grandmother always made large casserole dishes that would stretch to serve the whole family. Quite often, she would make Tuna Noodle Casserole. I am not much of a fan of tuna, I actually really disliked it when I was younger. The only dish I would eat that contained tuna was her super simple tuna casserole.
I always liked the leftovers best. For some reason, the casserole always got better after it was chilled and rebaked. The tuna blended with the creamy sauce, noodles, and peas so well.
I was looking to make a comfort dish this week. I had picked up some tuna on a sale for my hubby to make his favorite CopyCat Panera Tuna Salad Sandwiches. He has been in a tuna sort of mood. I had mentioned a few times about making my grandmothers tuna casserole and he turned up his nose each time that I had suggested it.
I have not had tuna noodle casserole in years and I was actually craving some. I said the heck with it and decided to whip it up for lunch today. I just didn’t tell him I was making it. After I snapped these pictures to share with you, I made him a plate and demanded him to give it a try. I knew he would like it if he just tried it. It’s like getting a child to try something new sometimes.
Sure enough he agreed that the stuff is pretty darn good. He said to add it to our dinner menu for next week so he must like it more than he wants to admit, ha ha. My kiddos are fans of pasta type casseroles so I am thinking they will like this dish too.
I only had some Italian Seasoning Panko bread crumbs on hand so I used them instead of plain. I think they add some extra flavor and will most likely use them again the next time I make this dish. My grandmother would often use crushed Potato Chips as a topping and they taste awesome too. The extra crunch really adds to the flavor and texture.
