Easy Spanish Rice

My family LOVES taco night which happens at least once or sometimes twice per week. My boys can really polish off some serious tacos. For years, I was always lost when it came to taco dinner side dishes. Sure tacos are great but having a Cilantro Lime Rice or a Mexican inspired red rice makes for a much better and filling meal.

This Easy Spanish Rice is one of my favorite side dishes to whip up when I am making a quick taco dinner. I can have it made in just a few minutes time. I serve it all by itself or sometimes we toss it in our burritos to make them more filling. My favorite way to enjoy it is with a bit of fresh cilantro. I usually chop up a bit to have on the side to add after plated.

I keep the spices very simple in our rice. The recipe is very similar to one you would find in a Mexican restaurant. The heat is at a minimum and the rice gains quite a bit of flavor from the tomato, onion, and garlic. I think it is perfect even for my picky eaters. If you are one who likes a bit more spice in your Spanish Rice, go ahead and kick the heat up a bit with some chipotle red pepper seasoning, maybe some salsa, or even add in some fresh tomato. I personally do not find that this simple side dish needs any additional heat or toppings.

Grab some white rice, chicken broth, tomato sauce, and a couple spices to make this Easy Spanish Rice recipe. You can have it ready in no time at all. If you need an easy taco night side dish, this Mexican rice will be perfect.

INGREDIENTS TO MAKE EASY SPANISH RICE

3 tbsp Butter
1/2 Onion, diced
2 cup White Long Grain Rice, uncooked
15 oz Tomato Sauce
2 1/2 cup Chicken Broth
1 tsp Minced Garlic
1 tsp Oregano
1 1/2 tsp Ground Cumin
3 tsp Chili Powder

HOW TO MAKE EASY SPANISH RICE

In a large skillet over medium heat, melt butter and add onion. Cook until tender.
Add rice and stir to coat. Cook 2-3 minutes until rice is lightly toasted.
Stir in tomato sauce and chicken broth.
Add remaining ingredients, stir and bring to a boil.
Reduce heat to low.
Cover and simmer for 20-25 minutes, until rice is tender.
Remove from heat and fluff with a fork before serving.

    Recipe sounds like my mom’s. I am 71 and hate what they serve in restaurants. Bravo and thanks.

    Just in case a human does read this, opinion please, can I use brown rice?

      Yes you can it just takes longer, so you might need to add a little extra liquid.
