Easy Fried Rice

My family loves Chinese take out but wow, it can be very expensive to feed my whole crew. Quite often we will just make our favorite take-out foods at home to save $$’s.

Since I have been trying to eat out less often, I decided to make Chinese takeout at home. We made our CopyCat Panda Express Sweetfire Chicken and then whipped up this quick and Easy Fried Rice.

Easy Fried Rice - can be made in just a few minutes time. Enjoy it as is or add in some chicken, pork, or even shrimp. Great meal or side dish.

The fried rice was amazing and so super simple. I plan to make it more often for a side dish or even for the kiddos as an after school snack.

To make your own homemade Easy Fried Rice at home you will need rice, onion, carrots and peas (frozen or fresh work best), a few eggs, and some soy sauce. Pretty simple and so inexpensive.

INGREDIENTS
4 cups Cooked Rice
3 tbsp Butter
1 Onion, diced
12 oz Frozen Peas and Carrots
1/2 cup Soy Sauce
3 beaten Eggs

Easy Fried Rice - can be made in just a few minutes time. Enjoy it as is or add in some chicken, pork, or even shrimp. Great meal or side dish.

DIRECTIONS
Melt butter in large non stick skillet.
Sautee onion until transparent.
Add peas and carrots and heat until thawed and tender.
Push vegetables to one side and scramble eggs in other side until set.
Mix eggs and vegetables together.
Add soy sauce and stir to mix.
Add rice gradually to keep it from clumping and ensure it’s well mixed.
Heat until hot and serve.

Easy Fried Rice

Ingredients 

  • 4 cups Cooked Rice

      Hands down the best fried rice recipe I’ve found. The only thing I do different is scramble my eggs separate and add once the rice has been completely added. Keeps the eggs yellow and from absorbing so much soy sauce.
