Easy Banana Bread

Do you ever buy too many bananas? I know I do way too often. Some weeks, my family will have them gobbled down in no time at all. Then I have some weeks that I am needing a recipe that incorporates the left overs.

Grab yourself four overripe bananas and a few other items to make this super Easy Banana Bread. It's great for breakfast or even dessert. You will find it moist and delicious!

I quite often have to remind myself mid week to check the banana situation. If I buy too many, the hubby will often beg (yes…. he will beg, ha ha) for me to make his favorite Easy Homemade Banana Cream Pie. I LOVE banana bread. I love my house smelling wonderful when I have a loaf baking in the oven. As a child, I would visit my aunt and she would always have some sort of bread baking. I knew that when I grew up, I wanted to be like her, lol.

I am a coffee lover. How about you? If you are an evening coffee drinker like I am, maybe you can appreciate the evening coffee and dessert thing. Having a tasty homemade bread or muffin with my coffee is the best. It’s like comfort for me.

To make this Easy Banana Bread, you will need just a few pantry ingredients and your over ripe bananas. You can have your loaf baking in just a few minutes time.

INGREDIENTS
4 ripe Bananas
1 cup Sugar
2 Eggs, beaten
1 tsp Vanilla
1/2 cup Vegetable Oil
2 cup Flour (1 cup can be whole wheat)
1 tsp Baking Soda
1/2 tsp Salt

DIRECTIONS
Preheat oven to 350.
Grease inside of a loaf pan with shortening.
In a large bowl, mash bananas.
Beat eggs and add to bowl.
Add sugar and oil and mix well.
Whisk together dry ingredients and add to banana mixture.
Mix well and pour into prepared pan.
Bake 50-60 minutes or until toothpick inserted in center comes out clean.

    This is my go to recipe for banana bread! I love that it uses whole wheat along with plain flour. I add walnuts just because I like nuts in my banana bread.

    I am not a cook and do not bake … mainly because I get to eat everything … and I do not need the excess weight … BUT … I had a few really ripe bananas in the bowl and don’t like to just bin things … so … I saw this recipe and thought it looked way too easy … and you know that they say ‘if it looks to good to be true’ … but it was and still warm from the oven – IT IS DELICIOUS . . . thank you … I like easy and the taste and texture are worth the excess kilo … xxx

    I have never made banana bread until now. Omygracious it was not only easy but so delicious. I added a cup of walnuts and soaked raisins. I folded in the flour and the bread was light and fluffy.

    So delicious!!!

    I have made this SO many times! It’s the best banana bread recipe and it’s so easy to customise! My latest one was pecans sprinkled on the top before baking. I’ve also made it with added cocoa and chocolate chips! Or toasted walnuts and white choc chips. Or my partners fave is regular and chocolate marbled together! So many options, and the original recipe is just as tasty.
    I’ve tried swapping out the oil for melted butter and found it added to the flavour but didn’t need quite as much as it made the finished product a bit stodgy.
    It might be my rubbish oven but I find I never need to cook it for more than 35-40mins but that’s just me!
    I’ve been meaning to leave a message and thank the author for well over a year. You’re the best!

    This is a family favorite! I make it at least once a week with old bananas. I leave out the vanilla (because It’s too expensive to buy so I don’t use it at all anymore), and I add 1 cup of chocolate chips! Thanks for a quick and easy recipe!

      I leave the bread in for an hour and then take it out, put aluminum foil over it, turn off the oven and let it sit. I don’t know what it is, but the bread turns out perfect every time!

    I cannot cook to save my life, but this came out amazing… so .thank you for such an easy to follow recipe, I also noticed that salt was mentioned early on, but not in the ingredient list, so didn’t add any and it didn’t specify when to add the vanilla, so just added it to wet ingredients before flour etc. Will definitely make again soon

    I changed it up a bit. Since I only had two bananas, I halved everything. Also, I used CC oil a little cinnamon and no vanilla (I was out) and I make muffins. They turned out really well and were done in about 30 min.

    Pretty good recipe. So you can always make this recipe at any time without waiting for bananas to ripen, peel 4 bananas, place in a ziplock bag and put them in the freezer. When wanting to make the bread, take them out of the freezer and in about an hour, you’ll be ready to go.

    One of the best loaves of banana bread I’ve ever made! I did substitute the oil with coconut oil. I like to bake with coconut oil because it makes things nice and fluffy. I just creamed my oil and sugar at the beginning then followed the recipe after that. I also added cinnamon because I just love it in all my bakes. Great great recipe and easy to modify! Thanks so much!

    I have this in the oven to cook… but just a couple notes. It says vanilla in the ingredients but does not say when to add it in the directions. The first part that says ingredients shows salt but that is missing from the bottom where the recipe is printable.

    It says in the ingredients to use vanilla, but in the directions, there is no mention of when to add the vanilla. Can you provide an explanation and answer as to when to add the vanilla? Thank you.

      I noticed this too. When you are mixing all the wet ingredients you would normally add vanilla. That’s what I did, then added my dry ingredients after that. It turned out great! I also added cinnamon because I use it in everything.

      I add it to the banana mixture. I also add about an 1/8 cup of milk… Makes it more moist. Mine is baking right now. I also added 1/2 tbs of cinnamon to mix it up. I’ll let you know how it turns out! :)

    I made this today for my family. It was really good! I don’t like bananas and I ate 2 pieces! I was wondering a couple of things…What size loaf pan did you use and did you put nuts in it? The pictures look like it has nuts in it.

      I made it today for my husband’s birthday, his favorite bread. I made it with a half cup of sugar because he is diabetic, it was great, I also added walnuts.
