We love these Breakfast Sausage Patties, I make them ahead quite frequently for an easy breakfast side. I usually make homemade sausage, toast, and eggs. They are great for a sausage breakfast sandwich – kind of like a homemade Sausage McMuffin.   • Brown Sugar – Adds a little touch of sweetness.
  • Garlic Powder
  • Sage – A classic Breakfast Sausage seasoning!
  • Salt and Pepper
  • Crushed Red Pepper – To add a little bit of heat. You could omit this if you’re worried about making your sausage too spicy.
  • Poultry Seasoning – This is a collection of different herbs and spices that should all work together to make our sausage tasty!
  • Paprika
  • Onion Powder

How to make Breakfast Sausage Patties

Making Breakfast Sausage Patties from scratch is so easy- you’ll wonder why you haven’t been doing it from the start! To make up a batch of these tasty patties, here’s all you have to do:

Process to make homemade Breakfast Sausage Patties.
  1. Whisk together all seasonings and spices until thoroughly combined. Add to meat and mix together until spices are evenly spread throughout the meat.
  2. Cover and let sit in the fridge for an hour before dividing into 8 portions and shaping into round patties.
  3. Cook in skillet over medium heat about 4 minutes on each side. Remove from pan once sausages are browned and cooked through before serving.

Substitutions

Out of an ingredient for our Breakfast Sausage Patties? We’ve got a couple of substitutions you can try!

  • Pork – Fresh ground pork is what is used to make our sausage recipe. However, you can easily make sausage from all sorts of ground meat: beef sausage patties, chicken sausage patties- just adjust spices and seasonings to taste.
  • Seasoning – Breakfast Sausage seasoning is a bit of a tricky thing to try and substitute around. You really want to keep the herb-y stuff like sage and poultry seasoning in there: if you’re out of those, try using other herbs like rosemary or thyme.

Variations

Want to try some different flavors in your Sausage? Here are a couple of ways to mix things up.

  • Spicy Breakfast Sausage – If our patties don’t seem hot enough to you, there’s a couple of ways to crank up the heat! Consider upping the amount of red pepper flakes and/or adding in some cayenne pepper to make Spicy Sausage Patties.
  • Maple Breakfast Sausage – Some people like a sweet breakfast and you can easily sweeten your sausage. Consider adding in some maple syrup or subbing it in for the brown sugar entirely- consider adding a little nutmeg in too as an added bonus!

Storage / Freezing

Storage: You can keep your uncooked sausage in the fridge or cook and store it in the fridge afterwards. Raw sausage meat will keep for 1-2 days while cooked Breakfast Sausage Patties will keep for 3-5 days.

Freezing: Cooked or uncooked, you can keep your sausage in the freezer as well. Uncooked sausage and fully cooked sausage patties will keep for 1-2 months frozen.

Top tip

Be sure to use a meat thermometer to check for internal temperature of 160 Degrees.

Breakfast Sausage Patties

Ingredients 

  • 2 tsp Brown Sugar
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Sage
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Crushed Red Pepper
  • 1/4 tsp Poultry Seasoning
  • 1/4 tsp Paprika
  • 1/4 tsp Onion Powder
  • 1 lb Ground Pork

Instructions 

  • In a medium bowl, combine all ingredients except the pork.
  • Whisk to evenly distribute.
  • Add the pork and mix until spices are well distributed through the meat.
  • Cover and refrigerate for at least 1 hour.
  • Evenly divide the mixture into 8 portions and form into patties.
  • Cook in a skillet over medium heat about 4 minutes per side (until sausage is browned on each side and internal temperature is 160.
