Strawberry and Banana Breakfast Quinoa

I made this quick and simple Strawberry and Banana Breakfast Quinoa this morning. After trying Quinoa last week in our Quinoa Chili Recipe, I figured I would give it a try for breakfast. I was excited to try Quinoa with some fresh fruit and nuts. Yum! I love fresh fruit and nuts on Oatmeal so, why not give it a try with Quinoa? I was amazed and really liked the Quinoa mixed with fruit, nuts and Agave. Yum.
Strawberry and Banana Breakfast Quinoa
I had some Strawberries and Bananas left over from a recipe and really need to use them up. I had some left over Quinoa too!. This breakfast was so quick, easy, healthy and yummy! The hubby and I both really love all of the flavor found in Quinoa. This breakfast was perfect. I needed something quick and easy today as Ikea is screaming for me to come shop ha ha!
INGREDIENTS
1/2 cup uncooked Quinoa
1 Banana sliced
1/3 lb Strawberries sliced
2 tsp Agave Nectar
2 tsp Sliced Almonds
DIRECTIONS
Rinse Quinoa in a fine mesh strainer until water runs clear.
Combine Quinoa and 1 cup water in a saucepan.
Bring to a boil. Reduce heat, cover and simmer for 15 minutes or until most liquid is absorbed.
Remove from heat and let stand covered 5 minutes.
Transfer to bowls. Drizzle with agave and top with bananas, strawberries and almonds.
If you have yet to try Quinoa, give it a try in breakfast form with your favorite fresh fruit. The strawberries and bananas worked well for us as those are our favorite fruits. Obviously, I think this would taste great combined with other fruits and nuts too.
