St Patrick’s Day Blondie Bars

Our family loves Blondie Bars so we had to make these St Patrick’s Day Blondie Bars. Blonide Bars are always so yummy, I prefer them over a cookie sometimes. Load them up with your favorite candies and/or chocolate chips and you have a wonderful snack. Since St Patrick’s Day is just around the corner, I decided to give Mint M&M’s a go on these Blondie Bars. We made Valentine M&M’s Blondie Bars for V-Day and the kiddos ate them up so quickly. These St Patrick’s Day Blondie Bars had the same result. I made a pan for the kiddos while they were at school and they were polished off before bedtime, ha ha.

The whole family, kiddos and hubby have been loving all the mint treats I have been making for them. The CopyCat Shamrock Shakes and the Mint Chocolate Chip Cookies that I made have had frequent requests. We can now add these Mint Blondie Bars to the list as I received another request for a second batch from the hubby.

The wonderful thing about Blondie bars is that they are so easy yet so yummy! I found my Mint M&M’s at Target in the regular candy aisle. I am thinking they  must be available year round (thank goodness since everyone really liked them).

St Patrick's Day M&m's Blondie Bars
INGREDIENTS
2/3 cup Butter
2 cup Brown Sugar
2 Egg
1 tsp Vanilla
1 tsp Baking Powder
1/4 tsp Baking Soda
2 cup Flour
1/4 tsp Salt
1/2 cup Chocolate Chips
1 cup Green Mint M&M’s

St Patricks Blondie Bars

DIRECTIONS
Preheat oven to 350.
Line a 9×13 Pan with parchment paper or spray with cooking spray.
Place butter and brown sugar in a medium sized saucepan and heat.
Stir constantly until smooth.
Cool for 5 minutes.
Add Eggs one at a time. Stir until incorporated.
Add Vanilla.
Add Flour, Salt, Baking Soda and Baking powder until combined.
Add half Chocolate Chips.
Add half M&M’s and stir.
Transfer mixture to prepared pan.
Add remaining M&M’s and remaining chocolate chips.
Bake for 25-30 minutes.
Allow to cool until slightly warm.
Remove from pan and cut into bars
