    Mini Taco Bowl Bites

    We are serving up these Mini Taco Bowl Bites as appetizers tomorrow evening. If you are trying to come up with some last minute holiday appetizers for the holidays, I will highly suggest these little bites of yumminess. Almost everyone loves tacos and bite form is just perfect. Or at least that’s my opinion, ha ha! The hubby and I made this batch of Mini Taco Bowl Bites for our get together last week with friends. They were such a hit that we decided to have them for our Christmas Eve party too!     These little appetizers are so simple to make. You could substitute Tostitos scoops if you are pressed for time. If you do so, I highly suggest making sure your meat is drier as it will soak into the Scoops much quicker.

    I found making my own scoops with corn tortillas to be less messy. Also, I have added some canned refried beans to the bottom in the past and that works great too.

    INGREDIENTS
    1 lb Ground Beef
    2 tbsp Taco Seasoning or Homemade Taco Seasoning
    1 diced Tomato
    6 Jalapeno Slices
    12 Corn Tortillas
    Shredded Cheddar Cheese

    Mini Taco Bowl Bites - Easy game day or party appetizer.

    DIRECTIONS
    Brown ground beef and drain.
    Dice jalapeños and add to beef.
    Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed.
    Reduce heat to low.
    Heat each corn tortilla in microwave for 30 seconds to soften.
    Using a 3 inch cutter (like a jar lid) cut 2 circles from each tortilla.
    Press each circle into the cup of a mini muffin pan, folding sides as needed.
    Place in 350 oven for about 12 minutes (until tortilla is crispy).
    Place each shell on cooling rack and fill with taco meat.
    Top with cheese and diced tomato and a leaf of cilantro (optional).

    Making your own mini bowls is so simple and they come out quite tasty. I like to add some salt to mine (I know bad for my health, ha ha). The addition of the salt really makes them so much tastier. I like that these are baked and not fried. Yet, they come turn out with crunch.

    When making your Taco meat do not be afraid to kick it up a notch and add in your favorite Mexican seasoning. I kept this recipe more simple with some jalapeno spice so that everyone will enjoy these. I would have kicked it up a notch with some habanero if I was not having kiddos on the guest lists.

    The cilantro and fresh tomatoes topping really added some great additional flavoring on these little bites. You could always add on some spicy cheese too!
