You are going to love this Mini Stuffed Peppers Recipe I am sharing with you tonight. The hubby and I enjoyed these for lunch. I will admit, I did not stop at just one or two.  Oh No, I consumed about 10-15 and I am a hurting unit tonight, ha ha. They were so good and I just couldn’t quite eating more. The hubby consumed a bit too many as well. Little mini sweet peppers with tons of flavor. These Mini Stuffed Peppers will become your favorite go to for an appetizer or meal.  They are small enough to be be a finger type food. So quick and easy to make too! If you are a stuffed peppers fan, give this recipe as well as my Stuffed Pepper Soup a try. I never liked stuffed peppers until I was an adult. Now I am totally addicted.

Mini Stuffed Peppers

You can grab bags of mini peppers at your local grocery quite cheap. I had some ground beef in the freezer (I like to stock up when it is on sale). The rice on the other hand I had ran out of. These kiddos of mine eat rice for a snack and forgot to tell me that they finished all of the rice yesterday. So, I had to make a quick trip to Kroger in the middle of cooking. GRR this momma was not happy, ha ha.

INGREDIENTS
1 lb Mini Peppers
1 lb Ground Chuck
1 cup Cooked Rice
2 tsp Garlic Powder
2 tsp Onion Powder
1 tbsp Worcestershire Sauce
1/2 cup Ketchup
1/2 cup Shredded Cheddar Cheese

Mini Stuffed Peppers - Super simple and makes for the perfect meal or appetizer.

DIRECTIONS
Split peppers lengthwise and remove seeds and pithy material.
Brown ground beef and drain.
Add garlic powder, onion powder, Worcestershire and ketchup to skillet.
Cook until heated through.
Add rice mix well.
Preheat oven to 350.
Spray baking sheet with non-stick spray.
Place split peppers on baking sheet and fill with meat mixture.
Top each pepper with shredded cheese.
Bake for 20-25 minutes or until cheese is melted.

Id di load mine up with some extra cheese! Maybe that would be the reason I felt stuffed. Oh wait, I guess I felt so stuffed was because i really did eat way too many of these, ha ha!

These mini Stuffed Peppers would be great for entertaining too! Just pop a bunch of them in the oven, place them on a platter or plate and you have a great hand held appetizer.

Mini Stuffed Peppers

Ingredients 

  • 1 lb Mini Peppers
