    This Mini Meatloaf Cupcakes recipe was a hit at our house last night. The whole family LOVES meatloaf . Meatloaf with mashed potatoes is a frequent meal around here.  We all love “mini” everything don’t we? Mini Tacos, Mini cupcakes. mini pizzas…so why not mini meatloaves? The hubby described this mini Meatloaf Cupcakes to me a few weeks ago. It sounded perfect for the kiddos. I knew they would get a kick out of mini meatloaves with mashed potatoes on top. I was RIGHT! These mini Meatloaf Cupcakes were a hit. We all polished off a tray for dinner last night.

    Meatloaf Cupcakes Recipe

    This Mini Meatloaf Cupcakes Recipe would be perfect for serving up meatloaf to a large group. Consider making them for your next potluck or office lunch. The meatloaf cupcakes held together real well and were full of great flavor. Plus they are perfect sized.

    Meatloaf Cupcakes -Super fun twist on traditional meatloaf. Serve these mashed potato topped meatloaves for family dinner or great for a crowd.

    If you have some ground beef you are looking to use in a meal this recipe will be great. I like that you really do not need much ground beef to stretch into a filling meal.

    INGREDIENTS
    1 lb Ground Beef
    1 Egg
    3/4 cup Milk
    1 cup Shredded Cheddar Cheese
    1/2 cup Quick Oats
    1 tsp Salt
    2 tsp Garlic Powder
    2 tsp Onion Powder
    2 tsp Worcestershire Sauce
    1/4 cup crushed Club Crackers
    2/3 cup Ketchup
    1/4 cup Brown Sugar
    2 tsp Mustard
    2 cup Mashed Potatoes

    Meatloaf Cupcakes -Super fun twist on traditional meatloaf. Serve these mashed potato topped meatloaves for family dinner or great for a crowd.

    DIRECTIONS
    Preheat Oven to 350.
    Place mashed potatoes in a zippered bag or piping bag and set aside for later.
    Combine Ketchup Mustard and brown sugar and mix well. Set aside.
    Combine remaining ingredients and mix thoroughly.
    Press this mixture into muffin pan.
    Spread top of each with the ketchup mixture.
    Bake for 30-45 minutes.
    Allow to sit for 5 minutes, remove from muffin pan and pipe on a mashed potato “frosting”.

    Next time we make these Mini Meatloaf Cupcakes I plan to toss in some of my favorites like green peppers and onions. The flavor was great but I love large chunks of veggies mixed in too (I wish my kiddos did, ha ha).

      This is a go to in our house! So simple and delicious. We use ground turkey and panko bread crumbs. The muffin tin makes it perfect serving sizes as well!

      Thirty-five years ago, I was an occupational therapist at a state hospital; we had a cooking group with geriatric psych patients. A lot of things HAD to be argued over. A regular mealoaf has only 2 crusty ends. He got a bigger slice than I did….I learned to make the meatloaf in cupcake pans. EVERYONE got a crusty bit and the servings were all the same size. And it baked quickly, too! Good way to omit onions or peppers for those who don’t like them, too! Great memory; thanx

      I’m gonna try this tonight. I’m gonna ad onion and peppers to the meatloaf and sprinkle cheddar on the potatoes and pop it back in the oven so that the cheese melts.

      My Mom always made meatloaf in balls – about 4ounce each ball – and so do I. Every 4 to 6 weeks I make a batch and freeze. It is so easy to take out and cook as many as I need. I have never baked them in a cupcake pan but I certainly will after seeing your post; however, I might have to reduce the size. I also use oatmeal in mine but think I will try the cracker. Thanks for all your recipes. Really enjoy your posts.

      Love this idea … especially if any are left over, I would slice the mini for sandwiches.

      As a solo person in my household I have to think about leftovers and how much to make that will not need to be freezed.

      I’ve made this for ages… well, at least since I came to Australia seven years ago! My wonderful Aussie husband calls them “Meat Cakes” … LOL! I don’t put the potato on top though, that’s for Shepard’s Pie in my house :)
