I’ve read many a pineapple pie recipe on the internet that calls for prepping pie dough, making a crust, and baking your pie in the oven. As much as I love a delicious baked pie, the warmer months call for cooler desserts. So I settled on this Pineapple Pie No Bake that uses a pineapple pie filling made from Jello and whipped topping. This filling, when mixed with some canned pineapple chunks, is easy to make and tastes amazing- especially when paired with a graham cracker pie crust!

No Bake Pineapple Pie Ingredients

Pineapple Gelatin – Store brand gelatin will work perfectly fine in this recipe! There is an Island Pineapple Jello but I couldn’t find any of it near me.

Whipped Topping – Like Cool Whip.

Pineapple – You’ll want some smaller pineapple chunks for our pineapple pie filling. Make sure you drain whatever pineapple you’re using well: too much liquid will make our pie filling all soupy and thin.
How to make Pineapple Pie

Mix pineapple gelatin with boiling water before melting ice into gelatin mix. Let set in fridge for 20 minutes.

Remove from fridge and fold with whipped topping before folding in drained pineapple chunks.

Transfer pie filling to crust and let chill for 4 hours before serving. Optionally garnish with whipped cream, cherries, and additional pineapple.
We start our pie filling off by combining our gelatin mix with some boiling water. Once combined, drop in your ice and stir until it’s melted in.
Move that to the fridge to set for about 20 minutes. It won’t set fully- we want this. After 20, pull from the fridge and add in the thawed whipped topping.
Fold that together with the half-set gelatin, trying to keep the whipped topping fluffy. Eventually, they’ll mix into a peach-y color. At this point, add in the pineapple chunks- drain them well and, for good measure, pat dry with paper towels.
Once those are folded in, our pie filling is done. Now we can transfer everything to our pie crust. Pour the filling over and spread it evenly.
Cover your pie and let it sit in the fridge for about 4 hours. This will ensure it sets fully before we cut into it. If you like, you can also garnish with some dollops of whipped cream, maraschino cherries, and some pineapple slices.
Once set and garnished, feel free to cut into slices and serve. Your pie will last a good 3-4 days in the fridge if kept well. After 3-4 days, the texture will start to worsen so enjoy quickly!
Easy Pineapple Pie
Ingredients
- 1 box Pineapple Gelatin, 3 oz
- 1 cup Boiling Water
- 1 cup Ice
- 8 oz Frozen Whipped Topping, thawed
- 20 oz Pineapple Chunks, drained
- Graham Cracker Pie Crust
Instructions
- Mix gelatin with boiling water until dissolved.
- Add ice and stir until dissolved.
- Refrigerate for 20 minutes.
- Remove from refrigerator and fold in whipped topping.
- Fold in drained pineapple chunks.
- Transfer mixture to pie crust and refrigerate for 4 hours.
- Optionally garnish with whipped cream, cherries, and additional pineapple.
