The slow cooker has been the source of plenty of easy weeknight dinner recipes for many years. I have put all sorts of delicious dishes through my slow cookers but I’m surprised it took me this long to get to Crockpot Sausage and Peppers! If you’ve never had this simple and filling recipe, you’re missing out it is, without a doubt, one of the best hoagie fillings you’ll ever have.

These sweet Italian sausages and bell peppers are cooked up in a bit of marinara sauce and a few choice Italian herbs. Throw in some garlic and onion, and you’ve got a tasty meal that’s perfect for a busy weeknight. As I’ve said, it’s great as a hoagie filling, but you could just as easily serve this over something simple like some rice or pasta.

Ingredients for Slow Cooker Sausage and Peppers

  • Sausage – We prefer a sweet Italian sausage for this recipe but feel free to experiment.
  • Bell Peppers
  • Onion
  • Sauce – A marinara sauce works really well here but you can also try using a spaghetti sauce or any other tomato-based sauce.
  • Garlic
  • Seasonings – We went with some oregano, basil, cayenne, and some salt & pepper.

For serving, you’ll also want either some hoagie rolls and some cheese or some rice. You could also serve over some pasta if you like!

How to cook Sausage and Peppers in slow cooker

We’ve got a short ingredients list and some easy prep for this recipe! Here’s all you need to do:
  1. Cut and prep all your veggies.
  2. Add all of your ingredients to a slow cooker or crockpot.
  3. Slow cook on high for 3-4 hours or low for 6-8 hours. Serve over rice or on toasted hoagie rolls.

After slicing your veggies, there isn’t much else left to do except getting everything in the slow cooker. Layer in your sausages.

Cover everything with your marinara sauce.

Lastly, add your seasonings and garlic.

Now close the cooker up and let it do its work. Let it cook on high for 3-4 hours or on low for 6-8 hours.

When your Sausage and Peppers are done, you can serve them up in all sorts of ways. Throw them in a toasted hoagie roll with some cheese for one of the best sandwiches you’ve ever had or serve simply over a bed of rice or pasta. You could even serve it up in a bowl on its own, topped with a bit of your favorite cheese. However you serve it up, we hope you enjoy it!

Freezing and Storage

You’re bound to have leftovers- especially if you made a double batch of this stuff. Once cooked, your Sausage, Peppers, and Onions should last about 3-4 days stored in an airtight container in the fridge. For longer-term storage, you’ll want to consider freezing: frozen, these sausages will stay good for about 3 months. To reheat, defrost in the fridge and then warm back up in the slow cooker with a splash of water.

Slow Cooker Sausage and Peppers

Crockpot Sausage and Peppers is a simple and delicious slow cooker recipe. An easy weeknight meal that’s great served up as a sandwich!

Cook: 4 hours
Servings: 5

Ingredients 

  • 1 lb Italian Sausage, Sweet, Hot or Mild
  • 1/2 Onion, sliced
  • 1/2 Green Bell Pepper, sliced
  • 1/2 Red Bell Pepper, sliced
  • 24 oz Marina Sauce, Can use homemade or store-bought
  • 1 tsp minced Garlic, (could also use garlic powder
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1/8 tsp Cayenne Pepper
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions 

  • Place sausages in the bottom of the slow cooker.
  • Place sliced vegetables over sausages.
  • Pour pasta sauce over vegetables.
  • Add garlic, oregano, basil, cayenne, salt, and pepper.
  • Stir to mix.
  • Cover and cook on high for 3-4 hours or low for 6-8 hours.
  • Serve on toasted hoagie rolls with cheese or over rice or pasta.

Notes

Use your favorite marinara sauce or add a homemade spaghetti sauce.
Consider topping with Parmesean Cheese.

  1. This is a dish my husband will enjoy! And I’m always looking for new ideas! However, what other way can I prepare this without using a crockpot? If I cook in heavy cookware on stovetop, how long will it take to completely bake ? Thank you!

  2. I haven’t yet made this but I’m going to this weekend.i have one question. Can I pre fry the sausages before putting them in the crockpot? Just to add a little color?
