Snowball Cookies

These traditional Snowball Cookies, or tea cake whichever you prefer to call them, make for a great Christmas cookie or even all year round dessert. The cookie is fabulous and melts right in your mouth. Oh so good!
Snowball Cookies
While growing up, I spent a great deal of time with my grandmother. During the holidays, we would bake until we couldn’t bake anymore, ha ha. Baking cookies was always so much fun. The good thing is we always had lots of great traditional cookies to enjoy during the Christmas season.
One of my favorite cookies we would make were these super yummy melt in your mouth Snowball Cookies. I know some call them a Russian Tea Cakes and others call them a wedding cookie. Whichever name you would like to call them, I know for sure that they are super simple and taste amazing.
Just a few ingredients and very little effort are needed for these tasty cookies. You will need butter, confectioners sugar, vanilla, and pecans or almonds. They come together so quick and are wonderful with morning coffee. I enjoyed a few this morning. You will need to be sure to not over bake. If anything, you are better off under baking these cookies. And be sure to load them up with lots of powdered sugar.
INGREDIENTS
1 cup Butter
1 1/2 cup Powdered Sugar
1/2 tsp Salt
1 1/2 cup Almonds or Pecans
3 tsp Vanilla
2 cup Flour
DIRECTIONS
Preheat oven to 325.
Chop nuts in food processor to finely chop.
In a bowl, cream butter, salt and 1/2 cup powdered sugar together until fluffy.
Add in nuts and vanilla and beat until blended.
Slowly add in flour, mixing well.
Shape into 1/2-3/4″ balls.
Place on ungreased cookie sheet.
Bake for 18 minutes
Allow to cool before removing from cookie sheet.
Fill a zippered bag with remaining powdered sugar.
Gently shake each cookie in bag so it is well coated.

They are called Secret Kiss Cookies when wrapped around a Hershey’s Kiss.
I’ve always made these but wrap the dough around a traditional Hershey Kiss! Out of this world good!
