Happy Cinco de Mayo! I can’t believe it’s already May. Time to celebrate with a bit of Mexican flare. Yup we will be have a Mexican dinner tonight. Last week, the hubby grabbed a pork shoulder while they were on sale. We will be enjoying one of our favorite meals tonight. I am making some CopyCat Chipotle Carnitas with CopyCat Chipotle Lime Rice and also some CopyCat Chipotle Pico de Gallo.
Since Cierra has become highly addicted to Chipotle Guacamole, I have been making her batches at home to save some $$’s. This stuff costs a fortune. Plus you will only receive a small condiment cup when ordering at Chipotle. When we make it at home she can enjoy as much as her little heart desires.
To make this awesome guacamole recipe at home you will need avocados, jalapenos, lime, lemon, red onion, cilantro, and some salt.
1 cup chopped Cilantro
1/2 cup finely chopped Red Onion
1 seeded and finely chopped Jalapeno
1/2 tsp Salt
1 tsp Lemon Juice
2 tsp Lime Juice
Peel and pit avocados.
Add juices and mash avocados with a fork.
Stir in remaining ingredients and mix well.
This recipe is super simple to make at home. If you frequent Chipotle Mexican Grill, you will want to keep fresh avocados in your fridge to allow you to whip up a quick batch to enjoy with your take-out.
