If you are needing a great crock-pot chili recipe, look no further. This Slow Cooker Chili recipe makes for a perfect meal idea for fall. You will find a bit of a kick in this chili so it is great for those families that like a bit of heat.
Slow Cooker Chili
It’s time to dig out the Crock-Pots and give them a good washing. Slow cooker recipes are best all year long but during the fall and winter months, we give ours a real workout. We make Slow Cooker Beef Stew and chili most frequently.
Chili is always a favorite. If we make a big batch, we can enjoy it for dinner and also use leftovers for Slow Cooker Baked Potatoes with Chili and Cheese.
Our CopyCat Wendy’s Chili is one of my favorite chili recipes but sometimes we just want a real kicking chili. One that has a bit of a bite but not too much bite. This Slow Cooker Chili Recipe is just that! Hot but not too hot!
Since this is a crock-pot recipe, you can toss your browned ground beef and all other ingredients right in the slow cooker and carry on with your day. By evening, you will have a super comforting chili.
This recipe comes together quite quickly. We add in the Chipotles in Adobo for a really smokey and spicy kick. Occasionally, I will even add in some jalapeno pepper to make it SUPER spicy.
INGREDIENTS
1 tbsp Olive Oil
2 lbs lean Ground Beef
1 large Onion, peeled and diced
1 Bell Pepper, seeds removed and diced
1 tsp minced Garlic
1 Chipotle Pepper in Adobo sauce, chopped
2 (15 oz) can Dark Red Kidney Beans
1 (15 oz) can Light Red Kidney Beans
2 (15 oz) can Diced Tomatoes
1 (6 oz) can Tomato Paste
1 cup Water
1/4 cup Chili Powder
1 tsp Cumin
2 tbsp Sugar
Salt & Pepper to taste
DIRECTIONS
Heat oil in a large skillet over medium heat.
Place ground beef, onion, bell pepper and garlic and cook until browned
Transfer to slow cooker.
Add remaining ingredients (except salt and pepper) and stir.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
Season with salt and pepper to taste.
This crock-pot recipe will be a frequent meal around our house this fall and winter. We like to add on cheese and dip crackers and bread. Super comforting and sure to keep us warm.
