Rainbow Jell-O Recipe

This Rainbow Jell-O Recipe was my kiddos favorite treat I have made for them. They were so excited to get their little paws on them. There is something about Jell-O that always gets them. But when they seen the Rainbow Jell-O bars they were so full of laughter,, it was priceless. My hubby is not much of a Jell-O fan and he was tossing these down like he does his favorite potato chips, ha ha! This Rainbow-Jell-O Bars recipe is for sure a keeper. I think this is my new treat that I will make when I have upset the household with my moodiness, ha ha.
Rainbow Jell-O Bars
When shopping last week I was looking for a fun rainbow type idea for St Patty’s Day (the kiddos love leprechauns and rainbows). I just so happened to be in the Jell-O aisle at Remke and there were so many bright colors and flavors to choose from (even Jolly Rancher flavors). They were begging to have a treat made with them ha ha! So making these Rainbow Jell-O bars was just what I needed to whip up.
These were so simple but timing consuming. These took me most of the afternoon. Luckily they were done before the kiddos arrived. Do not let the time issue scare you off. Everyone, kiddos and adults will LOVE these. They are so bright and colorful.
INGREDIENTS
1 box Red Gelatin
1 box Orange Gelatin
1 box Yellow Gelatin
1 box Green Gelatin
1 box Blue Gelatin
1 8oz Cool Whip
DIRECTIONS
Prepare an 11 x 13 pan with cooking spray.
Add 1 cup boiling water to package of blue Jell-O. Stir until dissolved.
Pour 2/3 cup gelatin into pan and place in refrigerator to set (about 20 minutes).
Add Cool Whip to remaining mixture to bring level up to 2/3 cup. Stir until Cool Whip melts and color is blended.
Gently pour on top of set gelatin and place in refrigerator to set (15-20 minutes).
Repeat this process with green, yellow, orange and red gelatin’s.
Allow to set for 2 hours before cutting and serving.
