This Pumpkin Waffle Recipe is going to be a hit with your family this fall. During the fall and winter months we like to enjoy a nice hot traditional breakfast on the weekends. This past weekend we decided that we would make some Pumpkin Waffles. Our Copycat IHOP Pumpkin Pancakes were a hit so we figured the kiddos needed to try some Pumpkin Waffles. For some odd reason I had tons of energy over the weekend and got a pretty early start both Saturday and Sunday. I think I am paying for it today, ha ha. I should have taken advantage of being able to sleep in over the weekend.

We really enjoy cooking with pumpkin during the fall months so I knew this Pumpkin Waffle Recipe was going to be perfect. Just load on the butter and syrup. YUM! As soon as we closed the waffle iron the house was smelling delish.

I have mentioned stocking up on Pure Pumpkin when finding a good sale. This past week I dropped in to Aldi and found pure pumpkin for around $0.89 per can so I loadedup my cart. Can’t beat the price. Stock yourself up so you can enjoy the savings over purchasing brand name.

Pumpkin Waffles Recipe 1

INGREDIENTS
3/4 cup Brown Sugar
3 tbsp Cornstarch
1 1/4 cup Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
3 tsp Cinnamon
1/2 tsp Ginger
1/4 tsp Cloves
1/4 tsp Nutmeg
2 Eggs
1 cup Milk
1 1/2 cup Pumpkin Puree
4 tbsp melted Butter

Pumpkin Waffles Recipe 2

DIRECTIONS
Add all dry ingredients to bowl and whisk to mix well.
Separate eggs.
Add yolks, pumpkin, milk and butter to a large bowl and mix to blend.
Add pumpkin mixture to dry ingredients and mix until just combined.
In a separate bowl, whip egg whites until stiff peaks form.
Fold egg whites into batter.
Pour batter into heated and oiled waffle maker and bake following directions.
Served with whipped butter, pecans and maple syrup.

I was quite impressed with this Pumpkin Waffle Recipe. I am looking forward to making it again throughout the fall and winter. Also… if you are looking for a great waffle iron, hop on over to Amazon and snag this highly rated Presto FlipSide Belgian Waffle Maker. I did quite a bit of research before purchasing a new waffle iron last year and this one has been great.

Ingredients
