If you are needing a tasty salad recipe, this Macaroni Salad Recipe will be perfect. During the summer Macaroni Salad is my favorite salad to enjoy. Growing up my grandmother would make huge bowls and we would have it with our lunches for days following. I can recall being disappointed when the last serving was dished up. Summer salads are always part of just about every meal we make at home during the summer. I usually whip up my Quick & Easy Potato Salad. This year my favorite has been my Pasta Salad with Balsamic Vinaigrette. I love all the veggies loaded up in a tasty summer salad. nothing beats it.
Macaroni Salad Recipe
This Macaroni Salad was perfect for me to enjoy with our hoagies at home last evening. The rest of the family is not big on Macaroni Salad but…. I am. I am looking forward to enjoying a dish with my next couple of meals.
I am planning a trip home this summer to New York and I can not wait to have a big plate of my grandmother’s macaroni salad. This Macaroni Salad was super tasty and perfect but, there is something about food that comes from my grandmother’s kitchen. I am sure many of you can relate, ha ha.
This Macaroni Salad is so simple to throw together. With just a few minutes time and a little bit of prep, you will have a great summer salad to enjoy.
1 cup Mayonnaise or Miracle Whip (my favorite in a Mac Salad)
2 tbsp Vinegar
1 tbsp Mustard
1 tsp Sugar
1 tsp Salt
1/4 tsp Pepper
1/2 lb Macaroni cooked and drained
1 cup chopped Celery
1 cup chopped Bell Pepper (Red and/or Green)
1 cup Chopped Cucumber
1/2 cup chopped Red Onion
3 chopped Hard Boiled Eggs
1/4 cup finely diced Carrot
pinch of Paprika
1/4 cup chopped Green Onion as garnish
Combine first 6 ingredients and mix well.
Add remaining ingredients and toss to coat evenly.
Refrigerate for several hours.
