I have to admit that these Frozen Chocolate Dipped Kiwi Pops had me in heaven last evening. Kiwi has to be one of my my favorite fruits. I love most fruits but Kiwi just really gets my love of fruit award.  During the summer we all tend to eat more fruit. I like to cold treats during the summer with fruit. Fruit Popsicles, fruit slushies and cold fruit drinks.

During the summer having great cold treats to snack on is a MUST around here. There have been many late evening trips to the grocery when my cold treat obsession has kicked in. Frozen treats can be quite pricy if we do not have a sale/coupon combo running.

I had a few kiwis leftover that I had purchased for a fruit salad this weekend. I was just going to peel them up and snack on them but decided that they would make a great frozen treat. Chocolate covered frozen fruit was the answer for using up this kiwi. So Simple just peel. slice, freeze and dip.

Frozen Kiwi Pops

INGREDIENTS
4 Kiwi Fruit
1 cup Melting Chocolate
20 Lollipop sticks

Chocolate Covered Kiwi Pops

DIRECTIONS
Peel and slice Kiwi into thick (between 1/4″ and 1/2″) slices.
Insert stick in each slice and place on parchment or wax paper and freeze for several hours.
Heat Chocolate by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
You will need to work with one pop at a time while they are completely frozen (no moisture). Moisture may cause your chocolate to seize up (clump).
Dip pop in chocolate and use spoon (if necessary) to coat completely. Gently shake off excess. Chocolate will set almost immediately.
Return to parchment and place in freezer to set up.
You can optionally drizzle with white chocolate by heating in microwave as described above, transferring to zipper bag, clipping corner and drizzling a small line back and forth across each pop.

These Frozen Chocolate Dipped Kiwi Pops were a perfect late evening dessert. The cold fruit and chocolate were perfect together. The kiddos, hubby and I LOVED them.
