Easy Shamrock Pie

Make this Easy Shamrock Pie for St. Patrick’s Day this year! It’s a no-bake recipe and only requires a handful of ingredients. You will find it creamy and delicious with mint flavor, just like a Shamrock Shake.

Since St. Patrick’s Day is just around the corner, I am sure you are looking for a tasty and festive dessert to serve for the holiday. This pie is a great idea! It’s similar to a Shamrock Shake but in dessert form.
I start with a store-bought graham cracker crust for this pie. Purchasing premade keeps the prep time for the recipe to a minimum. Feel free to make a homemade crust if you prefer. I think it would also taste wonderful with a Homemade Nilla Wafer Crust.
For the creamy and light pie filling, I combine vanilla instant pudding, mint extract and whipped topping (Cool-Whip). Additionally, green food coloring is added. The coloring will make the pie green like a Shamrock Shake. It adds no flavor but makes the pie more festive.
I have never made this pie with homemade whipped cream. I like to use stabilized whipped topping for no bake pies. Whipped cream has a tendency to collapse and not refrigerate or mix well.
St. Patrick’s Day is all about the food if you ask me. Mint and boozy desserts are usually trending. I usually make a batch of Guinness Cupcakes to serve after our dinner. But, this year we will be enjoying this Shamrock Shake Pie too!

Can I make this Shamrock Pie Ahead of time?
Sure, if you plan to make this ahead of time, you can cover and freeze. When you are ready to serve, remove to thaw about 2 hours ahead of time. You can garnish before or after freezing.
Ingredients to Make Shamrock Pie
- Graham Cracker Pie Crust
- Vanilla Instant Pudding
- Milk
- Mint Extract
- Whipped Topping
- Food Coloring
How to Make Shamrock Pie
Grab a store bought graham cracker crust or make homemade. A Oreo cookie crust would work too if you would like. Add the instant vanilla pudding and milk to a large mixing bowl. Whisk until the mixture thickens.
Now add the Mint extract and blend well. You can also use peppermint extract but the flavor will be a bit different.
Next, add the Cool Whip and green food coloring. Fold in with a spatula until all ingredients are combined. I added about 6 drops of coloring to start with and then a little more to get the color to resemble a Shamrock Shake.
Add the mixture to the prepared crust and refrigerate for at least 2 hours. I garnished the pie with extra Whipped topping, shamrock sprinkles, and cherries. They are not necessary but make the pie look prettier.

Easy Shamrock Pie
Ingredients
- 1 Ready Made Graham Cracker Pie Crust
- 1 Instant Vanilla Pudding Mix, 3.4 oz
- 2 cup Milk
- 8 oz Frozen Topping, thawed
- 1 tsp Mint Extract
- 6 drops Green Food Coloring
Instructions
- In a large bowl, combine pudding mix and milk.
- Whisk until dissolved and starting to set.
- Add mint extract and whisk until blended.
- Add whipped topping and food coloring.
- Fold in to incorporate.
- If color is too light add one additional drop at a time.
- Spread mixture into pie shell and refrigerate at least two hours.
- Garnish as desired.

You should use 1-1/2 cups of milk not 2. Also, if your using a larger pie pan you should use 2 packages of pudding.
This was inedible. We threw it away.
I made this yesterday. It tastes good, however, the filling is so runny that it can’t be cut but needs to be scooped out with a spoon. I followed the recipe exactly as written so I’m not sure why it never set up like the picture?
I agree. I had to put it in the freezer for an hour or two and even that didn’t make it stand up. I wonder if reducing the milk would help.
