Easy Mint Chocolate Chip Fudge

If you are looking for a fun fudge, this Easy Mint Chocolate Chip recipe will be great. Perfect for year round or great for a St. Patrick’s Day dessert too! Quick and easy fudge recipes are great. They require few ingredients and minimal effort. My kiddos and I love just about anything that is mint flavored. After enjoying our easy No Churn Mint Ice Cream, I was brainstorming about other mint recipes that were easy to make.
Easy Mint Chocolate Chip Fudge
I was snacking on some peanut butter fudge when the thought came to mind how yummy fudge with mint and chocolate chips would be. Just like our mint chocolate chip ice cream but in fudge form. YUM! So I made a quick trip to the grocery and picked up some sweetened condensed milk because I had everything else on hand.
I had this fudge whipped up in just a few minutes time. Plus it does not take much time to set. I placed mine in the refrigerator for about an hour. The kiddos spotted it and were anxious to dig in. Holding them off was difficult. I was amazed at how tasty this easy fudge is. The flavors of the mint and chocolate were perfect. It’s very rich so one pan will go along way. I think next time we make this easy fudge we will be cutting them into much smaller squares.
The ingredients for this Mint Chocolate Chip Fudge recipe are simple. Grab some Sweetened condensed milk, chocolate chips and mint extract
INGREDIENTS
18 oz White Chocolate Chips
1 tbsp Shortening
14 oz Sweetened Condensed Milk
1 tsp Mint Extract
1 cup Mini Chocolate Chips
DIRECTIONS
Line 8×8 pan with foil and spray with non-stick spray.
Melt white chips and shortening by microwaving for 45 seconds, stirring and repeating unil melted and smooth.
Add sweetened condensed milk and mint to melted chocolate and stir to incorporate.
Add food coloring to reach desired color.
Allow mixture to cool a litlle before adding mini chips or they will melt.
Fold in mini chips, reserving about 1/4 to place on top.
Transfer to prepared pan and press into place.
Sprinkle top with reserved chips and refrigerate for at least 1 hour before cutting.
