Chicken and Broccoli Pasta Salad is a simple & easy salad that’s great served cold. A family favorite recipe- great for leftover chicken!

Chicken and Broccoli Pasta Salad

It’s always great when you can make something delicious from leftovers. Chances are, if you’ve looked through the site, you already know that we love making use of leftovers. Chicken especially- we love chicken because you can use it in all sorts of dishes! Today, we’re using it in a delicious Chicken and Broccoli Pasta Salad.

Chicken Pasta Salad with Broccoli

Chicken Pasta Salad is good enough as it is but adding in broccoli only makes things better. Broccoli helps the whole salad taste a bit fresher- even after a stint in the fridge. Broccoli and chicken are also a classic flavor combo, so why not combine them in a salad?

We can’t forget about all of our supporting stars! Celery and red onions round out our veggie medley and play nicely with all the other ingredients. Raisins add a slight sweetness. Some fusilli pasta helps fill the salad out and it holds the creamy dressing well. Oh yeah, the dressing: it’s a creamy, tangy blend of mayo, sour cream, and a touch of dijon- plus a few seasonings.

Ingredients for Chicken Broccoli Salad

For the salad itself, you’ll need…
  • Pasta – We ended up using some fusilli, but you could just as easily use some rotini or your favorite pasta for salad.
  • Chicken Breast – This is a great recipe for leftover chicken breast or a store-bought rotisserie chicken but, if you need to cook some up from scratch, here are a few of our favorites.
    • Baked Chicken Breast
    • Air Fryer Chicken Breasts
    • You could also use a store-bought rotisserie chicken or make your own Slow Cooker Rotisserie Chicken.
  • Broccoli – Use fresh broccoli florets for this recipe.
  • Celery
  • Red Onion
  • Raisins
The dressing, meanwhile, is going to use…
  • Mayonnaise
  • Sour Cream
  • Dijon Mustard
  • Seasonings – We used some garlic and onion powders and some oregano.

Ingredients to make Chicken Broccoli Pasta Salad

How to make Chicken Pasta Salad with Broccoli

This is a very easy salad recipe. Here’s all you’ll need to do:
  1. Mix up your salad dressing.
  2. Add all of your salad ingredients and toss or mix to coat and combine.
  3. Season to taste and serve immediately or refrigerate until ready to eat.

First, cook up your chicken and make your pasta- We definitely don’t want raw chicken or uncooked pasta in our salad, ha ha! After that, mix up your salad dressing. Chop up or dice all the veggies and chicken and add them to the bowl with the other salad ingredients.

All that’s left at this point is to toss and coat your salad with the dressing. Toss and mix everything until everything’s got a nice coating of the dressing on it. After that, season to taste with salt and pepper, serve and enjoy!

How long does this salad last in the fridge?

Instead of enjoying it right away, you could also save your Chicken and Broccoli Pasta Salad for later. For storage, keep in an airtight container in the fridge. Kept this way, expect it to last about 3 to 5 days.

Ingredients

  • 3/4 lb Pasta
  • 4 cup Broccoli Florets
  • 2 1/2 cup Cooked Chicken diced
  • 1/2 Red Onion diced
  • 2 stalk Celery diced
  • 1/2 cup Raisins (optional)

Dressing:

  • 1 cup Mayonnaise
  • 1 cup Sour Cream
  • 1/2 tsp Sugar
  • 2 tsp Mustard
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Oregano
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder

Instructions

  • Cook pasta according to package directions.
  • Drain and rinse under cold water. Set aside.
  • In a large bowl, whisk together all the dressing ingredients until blended. Add in the cooked pasta, chicken, broccoli, onions, raisins and celery.
  • Toss to mix and coat all ingredients.
  • Refrigerate until ready to serve.

    This recipe is great! I changed a couple things around though. I added freshly (and finely) chopped rosemary and walnuts and subbed out the raisins for fresh red grapes. Delicious!
