Caramel Apple Pie

I have a slight addiction to everything caramel and apple. If you follow along on my blog, you will probably catch on to that quite quickly. I enjoy the two flavors all year long but when fall arrives, it is all about the caramel and apples. I share tons of great fall recipes that are always great for Thanksgiving and the Christmas holiday.

I make all sort of homemade pies to serve for our holiday desserts. In the past, I have always made my Homemade Dutch Apple Pie for an every day dessert and I ALWAYS make it for Thanksgiving and Christmas. This year, I plan to make this Caramel Apple Pie instead. It has taken over the show. It is The BEST apple pie I have made.

I had some granny smith apples leftover this week. For some reason, the kiddos did not take any in their lunch boxes. I knew I needed to make a new apple recipe to share on the blog in order for the leftover apples to not go to waste. The idea for this pie came along quite quickly. I modified my Easy 4 Ingredient Pie Crust Recipe (video for that crust is here on the page), used my Homemade Apple Pie Filling Recipe, and also the Dutch Apple Pie streusel topping to make this pie. The combination was so perfect.

I did use my favorite Smuckers Salted Caramel Topping in this recipe. I always have a couple jars in my pantry to use for recipes and for apple dipping for snacks. I think it is a great caramel for when I do not have the time to make my own Homemade Caramel Sauce. If you plan to make this recipe, you can use homemade caramel or purchase store bought. Either will work. You could use a salted caramel or just a plain caramel. I personally like the salted caramel best.

I thought this pie would take quite a bit of prep time and I was completely wrong. I had my house smelling of fall in no time at all. The smell of apples and cinnamon had me very anxious to try this recipe. I did get a couple of small burnt spots on my crust because I forgot to add on my pie crust baking cover. Luckily I remembered and got it placed on before the crust got to burnt.

If you should decide to make this Caramel Apple Pie, you can use your favorite apples. I mentioned I used a granny smith. I think the grannies will be best but I am sure others will be great too. I also mentioned modifying my Homemade 4 Ingredient Pie Crust. I just added a bit of cinnamon and I think it really made this pie extra special. The flavor in the crust was something I really noticed that made this pie stand out. I topped this pie with whipped topping and drizzled with the salted caramel. I thought the whipped topping was great but I think we will offer alamode the next time I make it.

I was in a hurry the day I made this pie and did not take a picture of the ingredients to share with you like I normally do.  The ingredient list is all quite simple and you most likely have everything needed on hand after you purchase your apples. I used many pantry ingredients that most of us keep in our cupboards.

INGREDIENTS NEEDED TO MAKE HOMEMADE CARAMEL APPLE PIE

FILLING:
4 cup sliced, peeled Apples
2 tbsp Lemon Juice
1/2 cup Sugar
3 tbsp Cornstarch
1/4 tsp Nutmeg
1 tsp Cinnamon
1 tsp Vanilla
1/4 cup Caramel Topping
1 cup warm Water
CRUST:
1 cup Flour
1/2 tsp Salt
1/2 tsp Cinnamon
6 tbsp cold Butter
4 tbsp ice cold Water
STRUESEL:
1/2 cup Flour
1/2 cup Sugar
1/2 cup Brown Sugar
1/2 cup Uncooked Oats (not instant)
3/4 tsp Cinnamon
1/4 tsp Nutmeg
6 tbsp cold Butter, cut into small pieces

HOW TO MAKE CARAMEL APPLE PIE

FILLING:
Place apple slices in bowl.
Add 3/4 cup water and lemon juice and toss to prevent browning.
In a saucepan, whisk together cornstarch and 1/4 cup water until blended.
Add cinnamon, sugar, vanilla and nutmeg. Whisk until blended.
Add contents of apple slice bowl to saucepan and cook over low heat until apples are tender.
Add caramel and stir to combine.
Set aside.
CRUST:
Mix together flour, cinnamon and salt in medium sized bowl.
Cut in butter with pastry blender or forks until mixture is pebble sized crumbs.
Add water and blend until mixture pulls together.
Roll into ball and place on lightly floured surface.
Roll out dough to about 13? circle.
Gently roll dough around rolling pin and unroll over pie pan.
Gently press into pan and turn edge under.
Crimp edges.
Fill crust with pie filling.
STRUESEL:
Combine dry struesel ingredients in a large bowl and whisk together.
Add cold butter and work with a pastry cutter until dry mixture is fully incorporated.
Crumble so pieces are no larger than pea sized.
Top pie with struesel mixture.
Preheat oven to 425.
Bake for 25 minutes.
Cover edges of crust loosely with pie crust ring or aluminum foil to prevent over cooking.
Bake for 10-15 minutes or until struesel is browned.

FILLING

    Cinnamon apple is one of my all time favorite flavors (and scents). Pinning this because YUM! Also, I didn’t know that thing was called a Pastry Cutter. I have one that someone gave me, and I love it. I use it for making egg salad, and homemade mashed potatoes.
