I am quite fond of make ahead breakfasts especially during the holidays. Breakfast casseroles with biscuits are some of my favorites to make. This biscuit and gravy bake along with my Bacon, Egg and Cheese Biscuit Casserole are always great on Easter, Thanksgiving and Christmas mornings.

Biscuit and Gravy Casserole Ingredients

It really doesn’t take any extra ingredients to turn Biscuits and Gravy into a tasty Breakfast Casserole. Here’s all the ingredients you’ll need:

  • Canned Biscuits – We’re using these Pillsbury Grands Biscuits for this recipe. We ended up quartering the biscuits before we used them in this recipe to make them fit in the casserole dish better. If you’re using smaller biscuits, you may end up cutting them into thirds or halves instead.
  • Sausage – Go with your favorite breakfast sausage here. We ended up settling on this hot pork sausage.
  • Flour – Just a basic all-purpose flour. We’re just making a gravy with it.
  • Milk
  • Salt and Pepper – Plus any other seasoning you might want to add in.

You can also grab some butter, melt it, and keep it off on the side while your gravy and biscuit casserole is baking. You’ll be able to brush the tops of the biscuits with melted butter to add in a little more flavor and help with browning.

How to make Sausage Gravy Biscuit Casserole

Process to make Sausage Gravy and biscuit casserole.

Like any good comfort food recipe, this Biscuits and Gravy Casserole is super comforting and it’s so easy to make! Here’s all you’ll have to do:

  1. Grease a small 7×10 casserole dish and place one can of quartered biscuits into the bottom. Bake in a 400 degree oven for 10 minutes.
  2. Crumble and cook sausage in a large skillet over medium heat. Once completely cooked, sprinkle with flour, stir and cook until absorbed, and then add milk and seasonings to make a gravy. Thicken or thin to preference.
  3. Pour the from scratch sausage gravy over cooked biscuits in casserole dish before topping with other can of quartered biscuits. Bake at 400 degrees for 10 minutes before covering with aluminum foil and baking another 15 minutes. Optionally brush biscuit tops with melted butter.

Substitutions

Don’t worry if you’re missing a couple ingredients for your Biscuits and Gravy Casserole! Here’s a couple substitutions you can use:

  • Biscuits – Biscuits are certainly the best choice when it comes to adding some bread or starch to this Sausage Gravy Casserole. If you’re out of biscuits or want to mix it up, you could try making your Biscuit and Gravy Casserole with crescent rolls instead.
  • Sausage – If you don’t have any breakfast sausage on hand, don’t worry. It’s real easy to make breakfast sausage from scratch- just take a peek at our Breakfast Sausage Patties recipe. You’ll find all the different seasonings and spices you need to make homemade sausage.

Variations

Need some ideas to change this baked breakfast casserole recipe up? Here’s a few ways to shaking things up a bit:

  • Biscuits and Gravy Casserole with Eggs – Add a bit of extra protein into your Breakfast Casserole with some eggs. Mix up some eggs and milk and pour it over the bottom layers of biscuits and sausage gravy before adding the top layer of biscuits. Maybe consider adding in a bit of shredded cheddar cheese to this Biscuits and Gravy Egg Bake too.
  • Overnight Biscuits and Gravy Casserole – An interesting idea you can try is making this into an overnight casserole recipe. Follow the recipe all the way up to after you’ve topped the casserole with the top layer of biscuits. Cover with aluminum foil and let sit in the fridge overnight. Bake as normal the following morning.
  • Bacon Gravy Casserole – Instead of using breakfast sausage and making a sausage gravy, there’s nothing stopping you from making Bacon Gravy and Biscuits. Sub in some chopped bacon for the sausage, follow the recipe as normal, and let us know how that breakfast casserole turned out!

Storage / Freezing

Storage: Remember to store your leftover Biscuits and Gravy Casserole covered in the fridge when you’re done. Kept like this, it’ll be safe to eat for 3-4 days. The texture will start to get worse before then, so we’d say you should enjoy within 2-3 days.

Freezing: Freezing this Sausage Gravy Casserole is another option you can consider. The texture might change a little- what with all the dairy in the gravy- but it should freeze and reheat alright. Tightly wrap in foil and keep frozen for 2-3 months. Ideally, reheat in the oven until it’s warmed through.

Top tip

If your biscuit gravy casserole is becoming a bit brown when baking, consider covering with aluminum foil to keep it from overly browning or burning.

Biscuits and Gravy Casserole

You will find this Biscuits and Gravy Casserole quick, easy, and perfect for feeding a crowd. A southern dish that is sure to be comforting and very filling. Since this breakfast casserole starts with store bought biscuits, the dish can be ready in no time at all.

Total: 45 minutes
Servings: 6 servings

Ingredients 

  • 2 can Grands Biscuits
  • 1 lb Breakfast Sausage
  • 3 tbsp Flour
  • 2 1/4 cup Milk
  • 1/2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp melted Butter, optional

Instructions 

  • Preheat oven to 400.
  • Grease bottom and sides of small casserole dish (7×10″) with shortening or cooking spray.
  • Cut one can the biscuits into quarters and place in bottom of prepared pan.
  • Bake for 10 minutes.
  • Crumble and cook sausage in a large skillet over medium heat until completely cooked.
  • Sprinkle flour over cooked sausage. Stir and cook until flour is absorbed.
  • Add milk, salt and pepper. Stir until mixture thickens and begins to boil.
  • Add additional salt and pepper to taste.
  • If gravy is too thick, add up to 1/4 cup more milk.
  • Pour gravy over cooked biscuits.
  • Cut remaining can of the biscuits into quarters and place over the gravy.
  • Bake the casserole for 10 minutes.
  • Cover pan with aluminum foil and bake for 15 more minutes or until golden brown.
  • You can optionally brush tops of biscuits with melted butter.

    I have 3 sons in college . The oldest is 6’4, middle is 6’5, and youngest is 6’4, all size 15 shoe. You don’t want to know our grocery bills or how much my boys, who’s friends are always gathering at our home, can eat. Growing up in the south, Dallas, TX everyone is familiar with putting gravy on anything. I know making two of these when the boys are home the same weekend, this will be filling, simple, and not a lot of time consuming steps to make. I just subscribed and I’m looking forward to getting your recipes. I’m a single father, can cook, but limited. So any assistance would be appreciated getting via of email. This recipe, I know will be a hit. I do know how to make homemade biscuits that don’t require rolling out, my Bread Machine does all the work I drop them on a cooking sheet, done. Thanks again.

  4. Y’all call these biscuits????? No self respecting southerner would ever, ever tolerate a pre-made canned roll to be substituted for a homemade biscuit!!!!!!!!!!!!!!!! This obviously is a lazy northerner’s way of cooking!!!!!!!!!!!! Shameful!!!!!!

        As a born and raised southern woman who is still planted in the dirt where she grew up I can tell ya this sounds delicious and I have fooled all my southern family and friends for over 40 years with gravy that begins with a mix so don’t preach to me about the sinfullness of canned biscuits. If I have time I go completely from scratch if not i don’t,, either way I don’t hear complaints nor does anyone anyone leave my house hungry, I will say a real southerner was raised that if you don’t have something nice to say don’t say anything at all….so I rekon we can tell who truly was brought up wrapped in the true hospitality and charm of the south.

      I was having a down in the dumps day, until I read your comment. It was hilarious! You certainly put a smile on my face!
      I love authentic southern cooking and do agree, yet this is supposed to be for those with minimum cooking skills and are crunched for time. So, it works for them.
      I made it because I was curious, it’s not bad., it lacks the traditional panache. Needs serious tweaks in the spice department. But all in all for a quickie throw together, not bad.
      Yet, for those of us who love the real thing, it’s definitely worth the time to make the traditional biscuits and gravy.
      Thanks for the chuckle, my stomach still hurts from laughing so hard!

  8. Recipe looks delicious! However, since you mentioned you’re not from the south I’m gonna let you in on something. This is especially true in Kentucky. Most southerners would agree that gravy for biscuits and gravy should be made with bacon instead of sausage. And you always always always save the grease for the gravy!

  9. Me and my husband ate this tonight! For some reason the biscuts on top were still very doughy on the bottom (the part touching the gravy) I put it back in the oven for 15 more minutes and it was still really doughy! What did I do wrong??
