Cucumber Sandwiches

With spring and summer weather just around the corner, I’m finding myself in the mood for all sorts of light and fresh-tasting recipes. Thankfully, all sorts of fresh vegetables and fruits are popping up back in the stores, including one of my favorites: cucumbers. These fresh, juicy things show up in a bunch of summertime recipes like salads but recently I found another tasty way to use them: Cucumber Sandwiches.

Cucumber Tea Sandwiches on a plate

I’m surprised it took me so long to finally try cucumber on sandwiches like this: these things taste so bright and fresh and the sandwich dressing is just the cherry on top! Traditionally, these kinds of sandwiches would be served up at luncheons or with tea- that’s why they’re usually called Cucumber Tea Sandwiches. The idea is that these mini sandwiches would help curb your appetite just before enjoying some tea.

Whatever reason you’re making these Cucumber Finger Sandwiches for, I can tell you one thing for certain: they’re good! We picked out a denser sandwich bread which, paired with fresh cucumber, gives these things the perfect “bite” and texture. The dressing, made with fresh dill and some garlic and onion powders, has just the right amount of zest and flavor to it. In all, you’re looking at a solid sandwich that’s perfect for serving up at a picnic, lunch, brunch, baby showers, or any other party- or a tea party, if you want to keep these tea sandwiches authentic! Ha ha!

Cucumber Sandwich Ingredients

  • Cucumber – The best cucumber for sandwiches is probably an English cucumber. These cucumbers usually have fewer and smaller seeds, thinner peels, and a sweeter taste. However, any garden cucumber should work in this sandwich recipe.
  • Cream Cheese
  • Mayo
  • Seasonings – We went with dill, onion and garlic powders, salt, and black pepper.
  • Bread – Go with a nice white sandwich loaf of bread for these sandwiches.
  • Note: Butter that is included in the ingredient shot below, is NOT needed.

How to make Cucumber Sandwiches

Making these Cucumber Sandwiches couldn’t be much easier. Here’s what you do:
  1. Slice your cucumber to your preferred thickness.
  2. Cream together cream cheese and mayo before mixing in seasonings. Spread dressing over inside of bread slices.
  3. Assemble your sandwiches and optionally trim crusts. Half or quarter sandwiches before plating and serving.

Before you start prepping the dressing, go ahead and get your cucumber sliced. Slice it as thin as you’d like: we didn’t slice ours too evenly and our sandwiches still turned out great! After slicing, start on the dressing by putting the cream cheese and mayo in a mixing bowl.

Using a hand mixer, cream these ingredients together.

Once creamed, toss in the dill, garlic and onion powders, salt, and pepper. Mix these in until fully combined with our dressing base.

Now it’s time to start sandwich assembly. Set out your bread slices and use something like a butter knife to spread your dressing on the inside faces of your bread.

Take your cucumber slices and start setting them on one side of the bread. If you sliced your cucumber extra thin, you should probably do another layer or two of cucumber to make sure you’ve got enough in your sandwiches. We also recommend “shingling” or overlapping your cucumber slices so you can fit more on there.

Once you’ve got enough cucumber added, put the other side of the bread on, completing the sandwiches. For presentation, we recommend removing the crusts and trimming into squares.

For serving, keep the sandwiches whole, cut into halves, or cut into quarters like classic Cucumber Tea Sandwiches if serving to a large party. Serve them up right away or keep covered in the fridge for up to 24 hours. Enjoy!

Cucumber Sandwiches

Servings: 18 servings

Ingredients 

  • 1/2 English Cucumber, thinly sliced
  • 4 oz Cream Cheese, softened
  • 1 tbsp Mayonnaise
  • 1 tsp fresh Dill, chopped
  • 1/8 tsp Onion Powder
  • 1/8 tsp Garlic Powder
  • Salt & Pepper to taste
  • 12 slices Bread

Instructions 

  • Slice your cucumber into even thin slices and set aside.
  • Beat together cream cheese and mayonnaise until smooth.
  • Add in onion powder, garlic powder, chopped dill, salt and pepper. Beat until blended.
  • Spread insides bread slices with the cream cheese mixture.
  • Place an overlapping Layer of cucumber slices onto cream cheese mixture on one slice.
  • Top with another bread slice, cream cheese mixture downwards.
  • Remove crusts and cut each sandwich into finger food pieces.

    They are soooo yummy! Just one question, what is the suggested serving size? I ate a whole sandwich, but I think that was more than a serving. I’m trying to watch my calories and am failing miserably!
