Mozzarella Stuffed Meatloaf Patties

These super simple Mozzarella Stuffed Meatloaf Patties make for an easy family meal. With just a few ingredients, you can whip up these meatloaf patties stuffed with mozzarella cheese. The tomato based sauce is great especially when paired with mashed potatoes. Perfect comfort food.
Mozzarella Stuffed Meatloaf Patties
After making our Simple Salisbury Steak meal with you the other day, my kiddos started with their meatloaf dinner requests. Salisbury steaks and meatloaf happen to my families favorite fall and winter meals. They love both meals with mashed potatoes and a veggie. I never have any complaints, they all clear their plates which means I usually do not have leftovers to crowd my fridge.
I will often make my favorite Slow Cooker Meatloaf or our Mini Meatloaf Cupcakes. They are both super simple but require a bit more effort and time to make than this super simple Mozzarella Stuffed Meatloaf Patties meal.
Stuffed burgers have been the rage these past few years. I bought the fancy stuffed burger press thingy mi-bobs. I went on a hunt in my kitchen cabinets and drawers and could not locate that darn thing. So I improvised and did them without the handy burger tool, I used the bowl of my measuring cup, ha ha. They turned out great. Just a little bit of cheese escaped.
I really liked how super simple this meal was to whip up for my family. The patties are perfect and paired well with the sauce/red gravy.
These patties and gravy have a bit of a Italian flare to them since they have mozzarella in the middle. I imagine you could use cheddar cheese too.
I loaded our Meatloaf patties on top of a scoop of mashed potatoes. I think the flavors were perfect together. My hubby noted that you could also try them on a bed of spaghetti. My kiddos love mashed potatoes with their meatloaf so that’s what we served up.
If your family loaves meatloaf, this will be a perfect ground beef meal for you to make. With just a few ingredients, you can whip up this meal in no time at all. Feel free to add in some diced onions and peppers to make your patties even tastier. My kiddos can be so picky about peppers and onions so I left them out this time.
INGREDIENTS
Patties:
1 lb Lean Ground Beef
1 cup Bread Crumbs
1 Egg
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Oregano
1 tsp Basil
1 1/3 cup Shredded Mozzarella
Sauce:
29 oz Stewed Tomatoes
1/2 cup Ketchup
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/2 tsp Oregano
1/2 tsp Basil
DIRECTIONS
Combine pattie ingredients, except cheese, in a large bowl.
Mix well with your hands to incorporate everything.
Divide mixture into 8 equal balls.
Form each ball into a pattie and press an indention into each.
Fill each with cheese.
Take 2 patties and stack together with cheese inside.
Press edges together to seal cheese inside.
Heat 1 tablespoon of olive oil in a large skillet over medium low heat.
Cook until browned on both sides (about 3 minutes per side).
Combine sauce ingredients in food processor or blender and run until blended.
Add sauce to skillet cover and simmer for 15 minutes.

My oldest son has had an obsession with Bison for the past 6 years. He is now 19 and in college studying pre-med but his love is bison. He wants to one day own several. Anyway, I often by bison meat.
