The family really enjoys our Meatloaf Cupcakes so much that I felt the need to do up our favorite dish in cupcake form. A twist on plain casserole dished mac & cheese was necessary. Cupcake liners and some bed crumbs were the answer. So simple and so quick.

These Macaroni and Cheese Muffins are great for serving up a crowd. Individual sized side dishes are perfect for making sure you really have enough to feed everyone. How many times have you made a casserole and wondered if you would have enough to feed everyone? the ingredients needed for your Mac & Cheese Muffins are quite inexpensive and simple. Just grab your favorite elbow or shell macaroni, cheese, milk, cornstarch, butter, onion and egg. I plan to add some green pepper or maybe even jalapeno next time we make them. I LOVE hot spices in my mac & cheese.

INGREDIENTS
8 oz Elbow Macaroni
8 oz Sharp Cheddar Cheese
2 tsp Cornstarch
1 cup Milk
1 Egg
1/2 cup Panko Breadcrumbs
1 tbsp melted Butter

DIRECTIONS
Preheat oven to 400.
Place liners in a muffin pan and spray with cookng spray.
Cook the macaroni according to the package directions.
Drain and return to the pan.
Add the cheese and stir until melted.
Whisk together the cornstarch, egg and milk, pour over the macaroni and mix.
Fill each cup with macaroni mixture.
Combine the butter and breadcrumbs and mix well.
Divide crumb mixture evenly over each muffin cup.
Bake for 20 minutes.

Macaroni and Cheese Muffins Recipe

Ingredients 

  • 8 oz Elbow Macaroni
