Slow Cooker Chicken Tacos

I am loving this Slow Cooker Chicken Taco Recipe and so are my kiddos. So simple yet full of flavor. Normally we make ground beef tacos as I have one child who is seriously addicted to tacos. Last evening I decide it was time to switch it up on them a bit. I tossed some chicken and spices in one of my lovely crock pots and had dinner ready without much effort.
Slow Cooker Chicken Tacos
I had some left over chicken tenderloins that were needing to be used and I had thrown together a big container of my Taco Seasoning Recipe so I knew these Slow cooker Chicken Tacos were just needing some torts and some toppings. Simple, Quick and Easy… my favorite.
INGREDIENTS
1 lb Chicken Breasts
1 cup Chicken Broth
1 tbsp Chili Powder
1 1/2 tsp Cumin
1 tsp Salt
1 tsp Black Pepper
1/2 tsp Paprika
1/2 tsp Corn Starch
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Crushed Red Pepper Flakes
1/4 tsp Oregano
1/4 tsp Brown Sugar
1/4 tsp Cayenne
12 Tortillas or Taco Shells
Your favorite toppings
DIRECTIONS
Add all ingredients to slow cooker and cook in low 6 hours.
Shred chicken with fork return to slow cooker and cook additional 30 minutes.
Add to Soft Tortillas or Hard Taco Shells or even a Burrito with your favorite Toppings.
Shredding the chicken is so simple and easy if you have a Kitchen Aid Stand Mixer be sure to give Shredding your Meat in the Kitchen Aid a try. So simple and has your shredding done in under a minutes time. Chicken Tacos are so yummy and I find them to be full of more flavor than beef. I was tempted to try some of this chicken on a salad (maybe I will try that next time around). The fact that we can toss this chicken in the slow cooker in the morning and have dinner mostly ready in the evening is perfect.
