St Patrick’s Day Rainbow Cupcakes

My kiddos fell in love with these St Patrick’s Day Rainbow Cupcakes that I made for them last week. Some of our favorite cupcakes have been Poke Cupcakes. I had seen many cupcakes floating around online with rainbows and had to make some for the kiddos (oh and myself as I LOVE cupcakes). Poke Cake has been a favorite of mine since I was just a little girl. My grandmother would always make poke cakes for just about every family function. I am sure many of the adults got tired of it…. but not me! I love how the jell-o moistens up the cake so much. For these cupcakes, Lime Jell-O poke cupcakes just seemed to be perfect!
St Patrick’s Day Rainbow Cupcakes
This recipe is pretty simple as it uses a boxed cake mix, boxed Jell-O and of course Air Heads Extreme candy for the rainbow. I did have to hunt a bit for the Airheads Extremes (thank goodness Speedway was loaded up on them). Be sure to check convenient stores as they seem to be the stores that carry them.
INGREDIENTS
1 box White Cake Mix
1 cup Water
1/3 cup Vegetable Oil
3 Eggs
3 oz Lime Gelatin
1 cup boiling Water
1/2 cup cold water
AirHeads Extremes
2 tbsp Milk
1 cup softened Butter
4 cup Powdered Sugar
Green Food Coloring
DIRECTIONS
Make cupcakes according to box directions
After baking move to wire rack to cool completely.
Poke holes in each cupcake
Mix Jello and boiling water stir until dissolved.
Add 1/2 cup cold water and pour over cupcakes.
Refrigerate for at least 15 minutes.
In a large bowl, cream the butter.
Beat in the milk mixing until fluffy.
Transfer 1/4 of the icing to the corner of medium size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe. Set aside.
Add several drops of green food coloring to remaining icing and mix until color is blended.
Transfer icing to the corner of large size zipper bag. Clip a small piece off the corner to pipe.
Cut each strip of the airheads into 2 1/2 – 3 inch lengths.
Ice the top of each cupcake with green icing.
Pipe a white cloud on each side of the green and insert the airheads strip between them to make a rainbow.
These St Patrick’s Day Rainbow cupcakes were so adorable. The kiddos and I gobbled them up quite quickly. Cupcakes are an item that disappears so quickly in our house. They seem to go much quicker when they are decorated up so cute. I had planned to show off these Rainbow Cupcakes to my aunt when she dropped by this week. They were gone too quickly to even have a chance to show them off ha ha!
