Velveeta Cheese is a nostalgic for me. My mother would use it to make so many different side dishes. Velveeta Broccoli and Cheese Casserole was one of my favorite dishes that she made. It’s a classic recipe for potlucks and holiday dinners.

Velveeta Broccoli and Cheese Casserole Ingredients
Our southern style Broccoli and Velveeta Cheese Casserole doesn’t need many ingredients- half the ingredients are right there in the name! None of these ingredients are going to be hard to get at your local grocery- you might even have them already. This is all you’ll need for this quick 4 ingredient recipe:
- Broccoli – What’s great about this recipe is that it’s really easy to use frozen broccoli and speed things up. You’re more than welcome to use raw fresh broccoli for this recipe, but you may have to cook it longer before using it in your casserole.
- Butter
- Cheese – We wanted to make this an easy Velveeta casserole, so we used Velveeta cheese for this recipe. I am sure a store brand would work too!
- Crackers – Ritz crackers are what we used but any of those kinds of butter crackers should work.

How to make Broccoli and Velveeta Cheese Casserole
This Velveeta Broccoli Casserole with Ritz Crackers is pretty easy to make once you’ve got your ingredients around. It’s the perfect quick casserole recipe if you need a tasty and filling dish made fast! Here’s everything you’ll need to do:
- Transfer the broccoli to a microwave-safe dish. Cover, microwave 8 minutes, stir, and microwave another 8 minutes. Move to a baking dish, melt some butter, and add it to the broccoli. Give a quick stir to coat and combine.
- Remove Velveeta cheese from the packaging and cut into smaller pieces to help it melt easier in the oven. Evenly top the broccoli with cut Velveeta pieces. This recipe is so simple, there’s not even a need to make a cheese sauce. The cheese melts perfectly with no milk or cream.
- Transfer baking dish with broccoli and cheese to an awaiting 375 degree oven and bake for 15 minutes. While it bakes, add Ritz crackers to a mixing bowl and crush into smaller pieces– but don’t crush them too fine.
- Melt more butter and pour over crushed crackers. Stir to coat and combine before setting aside.
- Pull baking dish from the oven after 15 minutes. Evenly sprinkle buttered cracker topping over casserole.
- Return casserole to the oven and let bake for another 15-20 minutes– your cracker topping should brown and cheese should melt and bubble. Pull from the oven and enjoy warm.
Storage / Freezing
Storage: This Velveeta Broccoli and Cheese Casserole should hold up pretty well in the fridge if you have any leftovers. Wrap leftover casserole in plastic wrap or transfer to an airtight container before moving to the refrigerator. Your Broccoli Bake should keep for 2-3 days.
Freezing: Dishes like this Velveeta Broccoli Casserole can be hard to freeze, but you’re more than welcome to try! For best results, let the casserole cool completely before wrapping tightly in plastic wrap and aluminum foil. Transfer to the freezer and keep for 2-3 months- thaw in the fridge overnight and reheat in the oven for best results.

Ingredients
- 36 oz frozen Broccoli florets
- 3/4 cup melted Butter, divided
- 24 oz Velveeta
- 45 Ritz Crackers, crushed
Instructions
- Preheat oven to 375.
- Place broccoli in a microwave-safe and oven-safe 13×9″ baking dish.
- Cover with plastic wrap and cook for 8 minutes.
- Stir, re-cover and cook another 8 minutes.
- Remove plastic wrap and pour 4 oz melted butter over broccoli and toss to coat.
- Cut Velveeta into smaller pieces and distribute evenly over broccoli.
- Bake casserole for 15 minutes.
- Place crushed crackers in a bowl and add remaining 8 oz of melted butter. Stir until butter is mostly absorbed.
- Sprinkle cracker mixture over casserole and bake another 15-20 minutes (until crackers are lightly browned and cheese is bubbly.
