Easy Rotel Dip is a simple delicious appetizer that’s great for parties. This cheesy and spicy hot dip is quick, easy, and addicting!

Whenever I need a hot dip for a party that’s certain to please, I’m usually making up this Easy Rotel Dip. All you need is 4 ingredients to make this delicious dip recipe that’s certain to please!

Easy Rotel Dip

There’s something about delicious, cheesy party dips that scream “comfort food” to me. I’ve made plenty of hot dip recipes in the past, but few will give you as much bang-for-your-buck as a simple Rotel Dip. If you’ve never had Rotel Dip before, you’re missing out: this stuff is cheesy, beefy, spicy goodness!

Rotel Dip on a chip

Rotel is a nice, economical choice for a party dip. The chief ingredient is, obviously, these canned Rotel tomatoes- which mix in some green chilies for some heat and flavor. Ground beef, which is usually on sale or sold for pretty cheap, brings some meatiness to the party. For cheese, we usually reach for Velveeta, which gives us a super creamy and gooey hot dip that’s certain to be eaten clean!

What is Rotel Dip? What’s in it?

  • RO-TEL – Rotel tomatoes are canned diced tomatoes with some green chilies tossed in for a bit of extra flavor and heat. Very cheap too: our local grocery stocks them for about a buck a can! They come in tons of flavors, so feel free to experiment and find one you like.
  • Ground Beef – You can, optionally, use a ground sausage here instead.
  • Velveeta – Cream cheese could also be used here.
  • Cayenne Pepper – If you’d like your dip to be extra spicy, double the amount. If cayenne ends up being too hot, sub in some chili powder.

How to make Rotel Dip

This is an incredibly easy dip recipe and we can do it all on the stovetop! First, brown your ground beef over medium-high heat until it’s cooked through and no pink is left in the beef. Once that’s cooked, drain off any excess fat before adding in your cheese and tomatoes.

Turn the heat down to medium and start letting that cheese meltdown. As it’s melting, stir it so your dip starts getting nice and smooth and everything gets coated in that cheese.

Add in your cayenne to taste- again, cayenne’s pretty hot, so add it bit by bit until you get the spice just right. At this point, you could also add in any other mix-ins. We gave some green onions a quick slice before sprinkling them in.

Once your cheese is fully melted and your dip is smooth and heated through, it’s ready to serve! Serve this stuff up hot with some tortilla chips and enjoy!

Rotel Dip

Ingredients 

  • 1 lb Ground Beef
  • 8 oz Velveeta
  • 10 oz Rotel Tomatoes undrained
  • 1/2 tsp Cayenne Pepper

Instructions 

  • In a skillet over medium high heat brown ground beef and chop into small pieces.
  • Drain excess fat.
  • Reduce heat to medium.
  • Chop Velveeta into cubes to speed melting.
  • Add undrained tomatoes and Velveeta.
  • Stir until Velveeta is melted and dip is hot.
  • Garnish with green onions or chives.
  • Serve with tortilla chips.

Notes

For a spicier dip, use 1 tsp Cayenne Pepper.
