Peaches and Cream Bars

You will find the Peaches and Cream Bars loaded with tons of great flavor. The crust combined with a peach and cream cheese filling makes for an amazing summertime dessert. Super simple and great for potlucks and bbqs.
Peaches and Cream Bars
My littlest guy has taken a big liking to peaches this summer. He has always enjoyed his peach baby snacks so I bought a bunch of peaches so I could try to convince him to eat the real thing, ha ha. Getting him to try anything new is always a challenge. After a few attempts, he will now chew on a peach peel all day long. He will not eat the peaches but really likes the peel.
Since he will not eat the actual peach, I have been eating them and feeding him the peals. Peach season is full swing right now. The stores are carrying lots of sales and a few different peach varieties.
If you follow my blog much, you know by now that we are a dessert eating family. Having something sweet in the evenings is a must for our family. If I have not made something special, everyone has to have a bowl of cereal or something else and they will complain, ha ha.
I had some fresh peaches on hand but not quite enough to make a full family dessert. I was really craving a yummy peach dessert. After some brain storming, I decided on these Peaches and Cream Bars since I had a can of peach pie filling. Fresh peaches are great but canned filling is so super simple and quick. I knew Cierra would like the cream cheese layer. I also knew the rest of the family enjoys anything I make in bar form, lol. So this recipe was perfect for everyone.
The recipe for these peaches & cream bars is so super simple. You can use fresh peaches or just grab an easy can of pie filling, a cake mix, cream cheese, butter, eggs, and some sugar. You can have this dessert in the fridge chilling in no time at all.
INGREDIENTS
1 box White or Yellow Cake Mix
1 cup softened Butter
2 Eggs
21 oz can Peach Pie Filling or you can use fresh peaches too!
8 oz Cream Cheese
1/2 cup Sugar
2 tsp Vanilla
DIRECTIONS
Preheat oven to 350.
Grease a 9×9″ pan and set aside.
Mix together cake mix, 1 egg and butter until it forms a uniform crumbly mixture.
Set aside 1 cup of this mixture to use as a topping later.
Press the remaining crumb mixture into prepared pan.
Bake for 12 minutes.
Spread peaches on top of the baked crust
Cream together cream cheese, remaining egg, sugar and vanilla until creamy.
Spread cream cheese mixture over peaches.
Sprinkle the cup of crumbs set aside earlier over the top.
Bake for 30-34 minutes or until edges of top begin to lightly brown.
Allow to cool then refrigerate before serving.
The crust was great, the cream cheesecake layer was amazing when combined with the peach filling, and the crust topping was amazing.
