No Bake Avalanche Cookies

If you are looking for a quick dessert, these No Bake Avalanche Cookies will be perfect. We make them with Rice Krispies cereal, peanut butter, white melting chocolate, and marshmallows. You will find them incredibly quick and easy to make.
No Bake Avalanche Cookies
Peanut butter desserts happen to be my favorite sweet treats. If I am baking, I love my easy 3 Ingredient Peanut Butter Cookies. Homemade Peanut Butter Cake also satisfies my peanut butter cravings. But, I am always up for making No Bake Avalanche Cookies because they are so simple to make.
No bake cookies are always great for the warm summer months. There is no need to turn on a hot oven. I make these Avalanche Cookies often for back to school lunches, and I always add them to my Christmas cookie list. I find them to be a perfect cookie exchange recipe too!
Sometimes I like to make easy no bake cookie recipes. Cookies have a longer shelf life than desserts like pies and cakes. Plus they can be transported without much hassle too! Oh, my teenage kids are usually eager to make no bake desserts because typically they are so simple.
Rice Krispies are excellent for making The Best Rice Krispie Treats , as well as many other recipes. Rice cereal is a perfect base for no bake cookies. Cookie recipes made with cereal are quite popular. I use oatmeal to make my No Bake Chocolate Peanut Butter Cookies. I have even seen many bloggers contribute cookies made from Chex cereal.

- Rice Krispies Cereal
- Peanut Butter
- White Chocolate
- White melting Chocolate
How to Make No Bake Avalanche Cookies
For this Avalanche Cookie recipe, I use a Kroger brand white melting chocolate tray. Melting the tray in the microwave allows the cookies to be made quickly. I also like that this method does not dirty dishes. I notice other recipes require melting white chocolate chips or baking chocolate, it takes a bit longer and requires more cleanup.
For the next step, we need to add the creamy peanut butter to a large bowl. I have never used a chunky version as I am not sure if it would work for these cookies.
Next, we add in the rice cereal and marshmallows. I have found that fresh mini marshmallows work the best.
Then, add in the white melted chocolate. Give the entire mixture a good stir. Make sure all ingredients are evenly coated. This is when the cookie consistency starts to take shape.
For the following step, you will drop heaping tablespoons of the cookie mixture to a parchment lined baking sheet. Feel free to add mini chocolate chips or seasonal sprinkles (red and green sprinkles are great for a Christmas cookie). Lastly, refrigerate the cookies until set, which will be 1-2 hours. I have stored my cookies in a zipper bag for 5-7 days so feel free to make ahead of time.
No Bake Avalanche Cookies
Ingredients
- 1 lb White Melting Chocolate
- 1/2 cup Peanut Butter
- 2 cups Rice Krispies cereal
- 1 cup Miniature Marshmallows
Instructions
- Line several cookie sheets with parchment paper. Set aside.
- Melt melting chocolate in microwave by heating for 1 minute then stirring and repeating until melted.
- Put peanut butter in a large bowl.
- Add cereal and marshmallows.
- Pour melted chocolate over the cereal mixture and stir until well mixed.
- Drop mixture using a tablespoon onto the prepared sheets.
- Place in refrigerator until set.

Looking for a way to use up some leftover marshmallows and Rice Krispies I chose this recipe, otherwise I don’t think I ever would’ve tried. So glad I did, much better than the overused Rice Krispies treat in my opinion!
Not being a fan of melting chocolate, I added a mixture of already opened chocolate chips. I had semi, white, milk and dark chocolate in the mix. No need to alter amount if thinking of doing the same.

Do you store these in the fridge in zip lock baggies or out of the fridge in zip lock baggies?
Wanted to make these but only have rice chex on hand. could I use them instead of rice krispies?
