Jello Mold desserts are always such fun to make and are one of my favorite things to make for a big party or get-together! You can use all your favorite Jello flavors and load them up with all sorts of fruits. Today’s recipe is a bit of a fun spin on the classic Jello Mold- it’s an Ice Cream Jello Mold!

Mixing ice cream and Jello sounds like one of those weird things where you think “that can’t work… can it?” To my surprise, it works perfectly: flavored gelatin combined with ice cream gives your Jello Mold an amazing creamy texture!

While you could go with just one flavor for this recipe, it’s more fun to mix and match a few flavors. It gives the finished Jello Mold a multi-color look that has a delicious spread of fruity flavors. With enough Jello and ice cream, you could make this into a Rainbow Jello Mold made with ice cream if you wanted!

Ingredients for Jello Ice Cream

Real short ingredients list for this recipe- always a plus!
  • Flavored Jello – We ended up using 4 separate Jello flavors for our Jello mold: cherry, lemon, lime, and orange. Have fun and experiment with other flavor combos!
  • Ice Cream – Vanilla is the plainest and safest option here. You can try using other ice cream flavors but vanilla won’t mess with your Jello flavors as much.

How to make a Jello Mold with Ice Cream

Short ingredients list and a simple recipe- sounds great, huh? Here’s all you’ll have to do…
  1. Dissolve your Jello in boiling water before whisking together with some vanilla ice cream. Add to bundt pan or baking dish and let set.
  2. Repeat with remaining Jello packets and vanilla ice cream.
  3. Keep Ice Cream Jello Mold in fridge until serving.

Getting this Jello Mold prepped and made is quite easy. After mixing up our first Jello package with some boiling water, we’re going to add in the ice cream and give it a good whisking.

Once the ice cream is thoroughly whipped in, we can add it to our awaiting bundt pan or baking dish. That’ll need at least 15 minutes to set, but give it 30 if you’ve got the time. Once that first layer sets, we can repeat the process with our next layer…

And, eventually, our final layer! With the last layer in place, we can transfer the whole thing to the fridge where it will stay cool for a while.

When it comes time to serve, you’ll want to carefully loosen the Jello from the mold or dish before inverting over a plate.

With your Ice Cream Jello Mold all plated up, feel free to cut off a slice and enjoy all those flavors!

How long is Jello Mold good for?

Thankfully this dessert tastes so good because it doesn’t last too-too long. I wouldn’t recommend freezing your Jello Ice Cream- freezers and gelatin don’t work together very well. All that leaves is the fridge, where this mold will hold up for 1-2 days. After that point, your ice cream mold has probably started melting. It’s still edible at this point and, if you really want, it should still be good to eat for another week.

Jello Ice Cream Flavor Combinations

Seeing as you can mix-and-match different Jello flavors, here’s a few interesting ideas for your next mold:
  • Cranberry, Apple & Lime – The classic flavor combo of cranberry and apple tastes great with a little lime added in!
  • Melon, Apple & Lemon – Melon Jello is paired with Jolly Rancher Green Apple Gelatin with a little citrus twist thrown in.
  • Mixed Berries – Use flavors for all the berries you’d find in your favorite mixed berries. Some Berry Blue, Strawberry, Raspberry, and some Blackberry Fusion will work together perfectly!
  • Classic Neapolitan – While Jello doesn’t make pistachio gelatin, there are a few brands that do. Pair pistachio with cherry and unflavored gelatin to get the red, white, and green of a classic Neapolitan! The unflavored gelatin will let the vanilla in the ice cream come through.

Jell-O Ice Cream Mold

Chill Time: 4 hours 40 minutes
Total: 4 hours 55 minutes
Servings: 8

Ingredients 

  • 48 oz Vanilla Ice Cream
  • 1 box Orange Gelatin, (3 oz)
  • 4 cup Water, boiling divided
  • 1 box Lime Gelatin, (3 oz)
  • 1 box Lemon Gelatin, (3 oz)
  • 1 box Cherry Gelatin, (3 oz)

Instructions 

  • Grease a bundt pan or gelatin mold and set aside.
  • In a medium bowl, combine orange gelatin mix and 1 cup of boiling water.
  • Stir to dissolve.
  • Add 12 ounces of ice cream and stir until blended.
  • Add to mold and refrigerate for 15 minutes until the top is slightly set.
  • In a medium bowl, combine lime gelatin mix and 1 cup of boiling water.
  • Stir to dissolve.
  • Add 12 ounces of ice cream and stir until blended.
  • Gently add to mold and refrigerate for 15 minutes until the top is slightly set.
  • Repeat with the remaining 2 layers and refrigerate 4 hours before serving.
  • Loosen edges with a butter knife to aid release.

Notes

Experiment with different flavors of Jello. Make your mold in a bundt pan or even a 9X13 pan or dish.

  1. I have heard of this recipe but in the freezer not the refrigerator. Since it is made with ice-cream will it not melt in the refrigerator?

    I am sure this will turn out fine. I used a Tupperware jello mold. It made 3 colors and not 4 as you see in the picture. Next time I would use a square pan.
