Homemade Breakfast Burritos

My favorite meal for breakfast or dinner quite often has got to be Homemade Breakfast Burritos. Yum! Yum! we will make breakfast burritos or our favorite Slow Cooker Breakfast Casserole for dinner frequently. My morning usually begins with getting the kiddos off to school. Luckily dad usually drops them all off. A few times per week I beg him to drop by the McDonald’s Drive thru window and grab me a couple breakfast burritos. Breakfast burritos are SO addicting! I love all the flavors wrapped up in a soft tortilla with tons of hot picante. Some days my tortilla is hard and they are not so yummy, ha ha! Yesterday was one of those days. The hubby thinks that I was having a bit of a tantrum. Maybe I was but I was really looking forward to having my breakfast burrito for a quick breakfast.
Homemade Breakfast Burritos
After my mini melt down we decided we would just take a little bit of time and make our own Homemade Breakfast Burritos. I have to say our homemade are SO much better than McD’s any hows, lol.
Making homemade breakfast burritos can be so much cheaper than purchasing from a restaurant. They require just a few ingredients and are simple to make.
INGREDIENTS
(Yields 4 burritos)
4 Burrito size Tortillas
6 Eggs
2 tbsp Milk
1/2 cup cooked crumbled Sausage or Bacon
1/2 cup Sharp Cheddar Cheese
1/8 cup chopped Bell Peppers
1/8 cup chopped Onion
2 tsp Butter
DIRECTIONS
Sautee Onions and Bell Peppers until tender. Remove from pan and set aside.
Whip together eggs and milk in a bowl.
Melt Butter in skillet or pan and cook scramble eggs.
Place tortilla on microwave safe place and evenly sprinkle cheese over surface.
Microwave for 45 seconds until cheese is melted and tortilla is soft.
Top with 1/4 of scrambled eggs, 1/4 of the meat and 1/4 of the sauteed veggies.
Roll in 1 side, then fold in the ends, and flip over the other side.
The great thing about making Breakfast Burritos at home is, you can place whatever toppings you or your family likes best inside. Burritos can be very filling so no need to cook a bunch of meat and veggies. A little of each goes a long way. I really like loading on the picante as it adds that extra boost of flavor.

Breakfast burritos are great to make in bulk and freeze. I make them all the time and change out the ingredients and my husband loves them. The best thing about them is that it is very cheap to make them and you can have a variety.
