If you are looking to grill out some Kabobs on the Grill you will want to give this Chicken and Pineapple Kabobs Recipe a try. Yesterday was my daughters last day of classes. I am so bummed that she is moving on to college but relieved at the same time. She is all grown up on me. After her senior breakfast she decided to have a few friends over to grill out. She did some brown nosing with her father so he would grill out for them, ha ha. Well, I am super happy she did as I enjoyed these yummy Chicken and Pineapple Kabobs for my lunch too! I had some left over Pasta Salad with Balsamic Vinaigrette that we added in for a side dish. I also made some Quick & Easy Potato Salad for them too!

I helped him about with preparing up the fruit and veggies. Yup… she owes me big time now, lol.
Lately I have been quite bummed at the price of beef and also vegetables. I decided she was having chicken kabobs since I could score a decent price on the chicken. Pineapples were just $1.29 at Aldi this week so I LOVED that deal. The sauce we had everything in our cabinets for which really helped keep the cost down.
INGREDIENTS
1 cup Ketchup
1/4 cup Soy Sauce
1/4 cup Honey
1 tbsp Mustard
1/2 cup Brown Sugar
1 tsp Minced Garlic
1 tbsp Lemon Juice
2 lb Boneless Skinless Chicken Breasts
1 Pineapple
1 Red Onion
1 Green Bell Pepper
Salt and Pepper (to taste)
DIRECTIONS
Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
Cut chicken, peppers and onion into 1 1/2 in cubes.
Peel and core pineapple and cut into 1 1/2″ cubes.
Place Pineapple, chicken and vegetables onto skewers alternating pieces.
Transfer 1/2 of sauce to another dish to use when serving.
Brush skewers with oil then with sauce and place on heated grill.
Baste skewers every 3-5 minutes while cooking. Cook for about 15 minutes.
The Chicken and Pineapple Kabobs were great. Tons of wonderful flavors blending together. I will have to say that I was quite disappointed that the girls were all finished up with school. I had tears in my eyes every time I looked at them enjoying their grill out. So happy and sad at the same time. I was not able to convince them that they will look back on this day and shed a few tears themselves.
