Caramel Apple Cake Cheesecake

This Caramel Apple Cake Cheesecake will make for the perfect fall and holiday dessert. It is both a cake and a cheesecake. You will find it loaded with great cinnamon, apple, caramel, and cheesecake flavors. Easy to make and oh so good.
Caramel Apple Cake Cheesecake
I am such a huge caramel apple fan. During the fall months, I consume quite a bit of caramel apple desserts. They put me in my happy place, ha ha.
Since fall will be here soon, this Caramel Apple Cake Cheesecake is a perfect dessert to have any day. It would be great for the Thanksgiving holiday.
For Easter dessert, I made our Carrot Cake Cheesecake. It was the most raved about dessert that I have ever made. I seriously got a big head over that glorious cheesecake cake. Since it was such a hit, I was anxious to create a fall version. So… Caramel and Apples it was!
I have hit another home run with this cheesecake cake. The flavor combinations were spot on. I am looking forward to making it a few more times this fall.
I used my Homemade Caramel in the Caramel Cream Cheese Frosting and it worked perfectly. I added freshly grated apples to the cake mixture and then topped with some store bought apple pie filling. I planned to use my own Homemade Apple Pie Filling but someone ate it on me when I was not looking. I am going to assume my son was the one who did that, lol.
I am going to toot my own horn and say this dessert was AMAZING. The entire family and my neighbors agree. There was not even one piece left to enjoy with my morning coffee.
This Caramel Apple Cake Cheesecake is so simple. Do not let the ingredient list scare you off. It actually comes together so easily and tastes so much better than a store bought. Plus it is so much better than anything you could purchase.
INGREDIENTS
Cake batter:
3/4 cup Applesauce or Vegetable Oil
1 cup Sugar
2 Eggs
1 1/2 tsp Vanilla
1 cup Flour
1 tsp Baking Soda
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg
1 cup grated Apples
Cheesecake batter:
16 oz softened Cream Cheese
3/4 cup Sugar
2 1/2 tsp Vanilla
3 Eggs
Frosting
8 oz softened Cream Cheese
1/2 cup softened Butter
4 cup Powdered Sugar
1/2 cup Caramel (store bought or Homemade Caramel)
Topping
12 oz Apple Pie Filling (canned or Homemade Apple Pie Filling)
DIRECTIONS
Preheat oven to 350.
Grease bottom and sides of springform pan (I used 9″). Set aside.
In a medium bowl, whisk together flour, baking soda, cinnamon and nutmeg. Set aside.
In large bowl, Beat together applesauce (or oil), sugar, eggs and vanilla until well blended.
Add dry ingredients to wet ingredients and mix well.
Stir in shredded apples.
Set aside cake batter.
In large bowl, beat together cream cheese, sugar and vanilla until smooth.
Beat in eggs until smooth.
Set aside cheesecake batter.
Spread 2 cups of cake batter over bottom of prepared pan.
Place spoonfuls of cheesecake batter in pan.
Top with spoonfuls of remaining cake batter.
Top with spoonfuls of remaining cheesecake batter and gently smooth top with a knife.
Bake for 55-65 minutes or until cake is set and cooked throughout.
Allow to cool to room temperature, then refrigerate 30 minutes.
Beat butter and cream cheese in large bowl until light and fluffy.
Add in powdered sugar and caramel and beat on high until smooth.
Frost top and sides of cheesecake. I used star tip around edges.
Top with apple pie filling and drizzle with caramel if desired.
Refrigerate several hours before serving.
