Apple Crisp Bites

Apple desserts are probably one of if not the best parts of the autumn and fall season. There’s tons of delicious desserts we love to make: apple pies, apple crumbles, and- one of our all-time faves- apple crisp. While a full-size apple crisp with a delicious streusel topping is a delicious dessert, we like to make some more bite-sized desserts around here. With that in mind, we loved making and eating these tasty Apple Crisp Bites.

Caramel added to Apple Pie Bites

These Apple Bites turned out great: so buttery and sweet with those baking spices bringing plenty of extra flavor. Easy to make too, especially if you go and buy pre-crushed graham crackers and canned apple pie filling. Of course, we like to make these from scratch- dicing our apples fine, making our crusts. However you make your Apple Crisp Bites, you’re certain to love them!

This fall dessert recipe is going to be perfect for any parties and get togethers you have planned. They’re perfect as a sort of mini dessert that guests can grab and enjoy quick and easy. Of course, we won’t tell anyone if you make up a batch just for you to snack on- just make sure to share, haha!

Mini Apple Crisp Ingredients

  • Graham Crackers – You’ll need crushed graham cracker crumbs for this recipe. Save time with store-bought graham cracker crumbs or taking whole graham crackers and crushing them up with a food processor or rolling pin.
  • Butter
  • Sugar – We used granulated sugar here. A light brown sugar might work out here as well and make it taste extra “autumn-y.”
  • Apples – We went with some Granny Smith apples here but feel try different apple varieties! You could also use store-bought or Homemade Apple Pie Filling for this recipe if you have any on hand- just chop it so it’s a bit finer.
  • Lemon Juice – Adds a bit of flavor and keeps our apples from browning.
  • Corn Starch
  • Spices – We went with cinnamon and nutmeg here, but try some other classic baking spices as well. You might even consider using some Apple Pie Spice!
That’s all you need to make these Apple Crisps. We also like to add a bit of caramel topping to the completed bites- optional, but highly recommended!

How to make Apple Crisp Bites

Making these delicious Apple Crisp Bites couldn’t be much easier! Here’s all you need to do:
  1. Prep your graham cracker crust by mixing melted butter, cracker crumbs, and sugar together. Press into greased mini-muffin tins and bake at 350 degrees for 6 minutes.
  2. Core, peel, and dice apples, mix with water and lemon juice, and then combine with cornstarch and water, sugar, and spices. Cook until tender then add to cooled crusts.
  3. Bake Apple Bites at 350 degrees for 5 minutes. Let cool completely before removing from pan with knife. Optionally top with caramel or ice cream.

We’ll start by making our graham cracker crust. For that, chuck the butter into a medium bowl and microwave for about a minute to melt it down. Once melted, add your graham cracker crumbs and some of your sugar.

Mix that thoroughly until everything is completely combined into a crumbly mix.

Heavily grease a mini muffin or cupcake pan and dole out about 1-1/2 tablespoons of the graham cracker mixture into each tin. Press it down into the bottom and partly up the sides. Toss into an awaiting 350 degree oven and let bake for about 6 minutes. Let cool while you start prepping the apple filling.

How to make apple pie filling

To fill our bites, we’re going to make up a quick apple pie filling. Start off by coring, peeling, and then dicing your apples fairly fine.

Transfer the apples to a medium bowl and top with about 3/4 cup of water and your lemon juice. Give a quick stir to coat and combine.

Over on the stovetop, add water to a saucepan and whisk in your cornstarch. No need to add any heat yet!

Add some sugar, cinnamon, and nutmeg before whisking to combine once again. If the sugar is having trouble dissolving, turn the heat on low.

Now add in your apples, give a quick mix, and cook over low heat until the apples have gotten nice and tender.

Let your filling cool before doling it out into your awaiting graham cracker crusts. Feel free to top with a sprinkling of brown sugar or graham cracker crumbs if you have any left!

Send your Apple Pie Bites back into the 350 degree oven and let bake for another 5 minutes.

Let cool completely before using a knife to loosen the pie bites from their molds. Our recipe yielded about 24 of these mini-muffin sized bites. Serve as-is or top with some caramel topping or maybe even a mini scoop of ice cream. Enjoy!

Apple Crisp Bites

Apple Crisp Bites are so sweet, buttery, and laced with delicious cinnamon and nutmeg flavor. These tasty apple desserts are so easy to make!

Servings: 24 servings

Ingredients 

  • 2 cup Graham Cracker Crumbs
  • 8 tbsp Butter melted
  • 3/4 cup Sugar, divided
  • 4 cup Apples, peeled, cored and diced
  • 1 cup warm Water, divided
  • 2 tbsp Lemon Juice
  • 3 tbsp Cornstarch
  • 1/4 tsp Nutmeg
  • 1 tsp Cinnamon

Instructions 

  • Preheat oven to 350.
  • Heavily grease mini muffin/cupcake pan.
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar and the melted butter. Mix until combined.
  • Divide the mixture evenly into the cups of the prepared pan (about 1 1/2 tablespoons in each).
  • Press into the bottom and sides to make a cup.
  • Bake for 6 minutes.
  • Remove from oven and set pan aside to cool.
  • Peel, core and finely chop the apples.
  • Place chopped apples in a bowl.
  • Add 3/4 cup water and lemon juice and toss to prevent browning.
  • In a saucepan, whisk together cornstarch and 1/4 cup water until blended.
  • Add cinnamon, sugar and nutmeg. Whisk until blended.
  • Add chopped apples to saucepan and cook over low heat until apples are tender.
  • Take the pan of cooled graham cracker cups and place about a teaspoon of the apple mixture onto each cup.
  • Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups (while still in the muffin pan).
  • Bake for 5 minutes.
  • Let cool completely.

Notes

Allow to completely cool before removing from pan or they will crumble.
Serve as is or combine tih caramel topping or even ice cream.
