It’s weird to think that you can make a cake better by poking a few holes in it! The cake is great, but poke cake is a simple upgrade that’s well worth the little bit of extra effort. We’ve covered poke cake in the past and today we’ve got another delicious spin on it: Strawberry Cheesecake Poke Cake!

Strawberries n Cream poke cake

This strawberries n cream poke cake is so easy to make: it all starts with some boxed cake mix- strawberry cake to be specific! Follow the instructions on the box, get to poking, then add our next major ingredient: cheesecake pudding. Of all the instant pudding flavors you can get, cheesecake is probably one of my favorites because it’s great on its own and it works wonders in all sorts of delicious dessert recipes. With this flavor combo, you get all the best parts of moist strawberry cake and creamy delicious cheesecake- all with just a handful of ingredients!

This is one tasty poke cake recipe that you folks just have to try for yourselves. Once your cake is baked and the pudding’s mixed up, there’s only a couple of hours of chilling in the fridge between you and one delicious dessert! Ingredients for Strawberry Poke Cake

  • Strawberry Cake Mix – We went with Pillsbury but this recipe should work just fine with Betty Crocker cake mix or any other brand. You will also need the ingredients to make a cake with your cake mix- chances are, you already have most of them sitting around.
  • Cheesecake Instant Pudding – Jell-o is the only company that makes this stuff, as far as I can tell. You can find it at most grocery stores.
  • Milk
  • Frozen Whipped Topping – Like Cool Whip.

How to make Strawberry Cheesecake Poke Cake

Making this Strawberry Cheesecake Poke Cake is very easy. Here’s all you have to do:
  1. Follow the instructions on your cake mix to make a strawberry cake. Combine your pudding mix and milk to make instant pudding.
  2. Poke several holes into your strawberry cake before filling the holes with cheesecake pudding. Spread thawed whipped topping evenly over the top of the cake.
  3. Let the cake refrigerate for at least 2 hours. Optionally garnish with chopped strawberries before serving.

This recipe starts off, simply enough, with making a strawberry cake using your cake mix. Just follow the instructions and you should come out with a delicious moist strawberry cake! Once the cake is cooked and cooled, poke some holes into it using the handle of a wooden spoon. After that, we’re going to mix up our instant pudding using the boxed pudding mix and some milk.

Within a minute or two of mixing, those will come together to make a pudding. We’re going to pour and spread that pudding evenly over the top of our poked cake, making sure to get that cheesecake pudding into each of the holes we poked.

The last thing we need to add is some whipped topping. Let your Cool Whip or another frozen whipped topping thaw before evenly spreading it over the top of your poke cake.

There- all that’s left is to let this cake chill in the fridge. We’d recommend giving it at least 2 hours. Letting it sit longer will let that pudding really saturate the cake though, so it might be worth it to wait a bit!

Optionally garnish your cake with some chopped strawberries for a bit of color and extra fruity flavor. Hack off a slice and enjoy!

Strawberry Cheesecake Poke Cake

Ingredients 

  • 1 box Strawberry Cake Mix + ingredients
  • 1 box Instant Cheesecake Pudding Mix, 3.5 oz
  • 2 cup Milk
  • 8 oz Cool Whip, thawed
  • Diced strawberries, optional

Instructions 

  • Make the cake according to package instructions.
  • Allow to cool.
  • Poke holes in the cake with the handle of a wooden spoon.
  • In a large bowl, whisk together pudding mix and milk.
  • Allow the pudding to slightly thicken.
  • Pour pudding over the cake, making sure to get into all of the holes.
  • Spread whipped topping over cake.
  • Garnished with diced strawberries, if desired.

Notes

A strawberry-flavored cake works best for this recipe. They can be found at almost all grocery stores.
